Good 45º cloudy pressure dropping morning. Looks like "just cloudy" for a
few days. Welcome. Got almost 3/4" of rain yesterday. Looks like the weather
activity is south and north of us.
Yesterday I went to Costco in POURING rain. Rained all the way there and all the way back. Store was sooooooooo crowded. So many self-absorbed customers, taking up the whole isle and not moving until you have to say "excuse me" .... so many walking so darned slow they couldn't get out of their own way if they had to! Sheesh. Then the nuts on the I-5 that can't drive in rain!!! OMG. I went up to Grants Pass to drop off some stuff to Brian and came back the river road. No more I-5 for me in the rain!~!!!
Today my special friends Andy and Linda Nantz are celebrating their 50th
wedding anniversary. Linda is a BFF and her Andy was in the Marines with Jerry.
HAPPY ANNIVERSARY KIDS! Love you guys!!! ♥♥
Celebratory dinner out tonight and then a trip to Carmel for a couple days
where they honeymooned!
Here is a recipe Jen adapted from Brian's favorite Gumbi at Carmine's
Restaurant. Ralph nor Vera nor Carmine Sabetella would part with their recipe,
so Jen using her amazing skills made this:
JEN'S GUMBI
1/2 box rigatoni
1/2 pkg frozen Italian style meatballs or your own, small 1" diameter
2 cans sliced mushrooms
1 pkg Knorr Creamy Tomato Sauce (mix with milk .. or use my Vodka Sauce
from yesterday's blog)
1/4 onion, chopped and sauteéd in olive oil until translucent
5-6 cloves garlic, boil ahead of time until soft, chop and saute with
onion
1 diced tomato
3-4 cups grated mozzarella cheese
1/2 cup grated Parmesan cheese
Cook rigatoni and drain. Sauté mushrooms and thawed meatballs in small
amount of olive oil. Mix all ingredients in large baking dish. Bake 350º for
about 30 minutes until cheese is melted and hot through.
The first Carmine's was on Live Oak in Arcadia, near out house in Temple
City... We loved going there!
Then they opened a larger one on Fair Oaks in So. Pas...
This restaurant
used to be called Lasorda's. Owned by Tommy (Dodger manager). Went there once.
Expen$ive! Had a cup of coffee and it was like $5.
Carmine's food has always been great and large portions for small
money!
