Frozen ~ Steve&Barb ~ Prime Rib



 

Good 19º morning.  Everything, and I mean everything is frozen!!! Brought in the hummingbird feeders and hopefully they will thaw fast. Birdies won't be happy.

 
I went out on the porch to take pictures of the frozen 'tundra' and there were 3 coyotes!!
 
The last one is the coyote who has been hanging out here for a year or more. Still limping.

A friend asked me about cooking prime rib..... here is a foolproof way, comes out perfect every time...

Make a rub of salt and pepper and garlic and/or onion powder and or any other type of herb you like and you can even mix it with butter or olive oil .... rub onto roast. Put in roasting pan, turn oven to 550º. When oven is ready put in the roast and cook it 5 minutes for every pound for rare, 6 minutes per pound for medium. Then turn off the oven and DO NOT OPEN THE OVEN DOOR FOR 2 HOURS! Done to perfection.

Here is a formula: For me it was 3.75 lbs x 5 min. = 18.75 minutes or 19 minutes.
To make a very quick natural sauce; pour off the excess fat, and place the roasting pan over high heat. Add a few cups of water or beef broth and bring to a boil while scraping all the caramelized beef drippings from the bottom of the pan with a wooden spoon or whisk.

Let this boil and reduce slightly while you slice the meat. Pour into a serving bowl, season with salt and fresh ground black pepper to taste, and serve along side the prime rib.

Go For A Ride Day

 

 

                                                        
 
As the holidays approach, life becomes chaotic, and perhaps a bit stressful. Take a breather, and go for a relaxing ride. You don't need a destination to enjoy this day.  But, you certainly can bring family or friends along for company.
The means of transportation can be anything. Sure, a car, bus, or motorcycle ride may immediately come to mind. Here are some other ways of riding, that may prove more fun than the family vehicle:Take a sleigh ride.
Ride a horse.
Ride a horse-drawn carriage.
Snowmobile rides are always "cool".
A bicycle is a great, way to ride and exercise.
A boat ride, if your are a warmer climate.
Doesn't a plane ride to a sunny vacation spot sound like fun!?

Oh my goodness it looks like snow at your place! Very pretty but very cold, especially the toilet seat, eh? lol

I have cooked the prime rib that way many times. I always add minutes to the oven-on time because I don't like it so rare. You are right. It's perfect! Be sure to hang a sign on the oven to NEVER NEVER open that door as it will ruin it.

Yes those pups and kitty in the cages looks so sweet. I've heard friends ssy they wish they had a huge spread and they would take them all! :)

Yes, it does look like snow! I am lucky I can start my car from in the house and it will warm up before I have to go get into it!!!
You are right about the prime rib and opening the door!!! xo

LOL- What is so good about a 19 degree morning? I'm with the Chihuahua- take a place some place warmer!

I have a friend whose husband left her. He was worried she would be distraught. He had the local police make a welfare check. Through her sobs, she decides the officer really a stripper and she tells him to go ahead.... take it off. Take it all off...
