Good 58º cloudy morning.........
 
 
The clouds started coming in yesterday, very breezy, and by noon it was dark.
 



 
We kept heating up. Soon it was 81º and by 2:30 it was 87º!

Up in the pasture was a turkey vulture....wings out.... with turkeys walking by casually...

After the pastures were brush-hogged, there probably were some critters the vulture was interested in.
 
And Mr. Dove sittin' on the fence....

Penguin Nils Olav has been an honorary member and mascot of the Norwegian King's Guard since 1972. After over 35 years of ‘duty' he was knighted at Edinburgh Zoo. During the ceremony, Nils had a sword dubbed on each side of his head, where his shoulders should be, to confirm his regimental knighthood. A citation from King Harald of Norway was read out, which described Nils as a penguin 'in every way qualified to receive the honor and dignity of knighthood.'
 
 
Recipe: The Ultimate Grilled Cheese from Mr. Food...

"There is no denying it, this is truly the Ultimate Grilled Cheese Sandwich. You see, when we made it, this dish disappeared so fast in our Test Kitchen it barely even had time to cool!"
 
  • 3/4 cup mayonnaise
  • 3 ounces cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 10 slices sourdough bread
  • 4 tablespoons (1/2 stick) butter, softened
 
 
  1. In a medium bowl with an electric mixer, beat mayonnaise and cream cheese until light and fluffy. Stir in Cheddar cheese, mozzarella cheese, and garlic powder; mix well. 
     
  2. Spread each of five bread slices evenly with cheese mixture. Top with remaining bread slices. Spread butter on both sides of the sandwiches. 
     
  3. In a skillet over medium heat, cook in batches until golden on both sides and the cheese is melted.

Later my dinner was Schwans Chicken Lo Mein .... so good and tasty and EASY prep....

Chicken Lo Mein Skillet Meal is a mix of roasted chicken tenderloins, fire-roasted onions, green and red peppers and tender noodles coated with a savory sauce that has hint of soy.

  • Prepare from FROZEN state.
  • 1. Open package and remove sauce pouch. Place sauce pouch into warm water to thaw.
  • 2. Preheat 2 tablespoons of oil in large non-stick skillet over medium heat.
  • 3. Pour remaining contents of bag and 2 tablespoons of water into skillet, stir and cover.
  • 4. Cook for 10 - 12 minutes. Stir occasionally.
  • 5. Add sauce and stir frequently for 1 - 2 minutes.
 
 
Then by 6:30 it looked like rain for sure......
but we didn't get a drop! Apparently it rained south of us in Medford, but bypassed this area totally. Dang!

National Escargot Day is observed each year on May 24th.  This day is in honor of the famous French dish of cooked land snails. Escargot is enjoyed by many. However, it is an acquired taste.  It is usually served as an appetizer in French restaurants.
 Escargot {es.kar.go} is the French word for snail.
The dish of Escargot is usually prepared by removing the land snails from their shells, cooking them with garlic, butter and wine. They are then placed back into their shells with the sauce for serving.    The dish is served with a special fork and tong for easier dining.

Good 55º scattered clouds sunny morning. Yesterday was something else... temperature wise.... we got to 88º and then just at the tail end of the day it hit 90º! 
 
 
Yesterday was errand day.... store, post office for packages, etc.... a quick run to Medford for a doc appointment and all these pretty clouds on the way home.....

Lucy Hayes was an American first lady and the wife of Rutherford B. Hayes, the 19th president of the United States. She was the first first lady to have graduated from college, receiving her degree from Wesleyan Female College. What happens when an animal can't get along with his own kind? Well, he moves in with some kind humans and becomes one of those strange pets. At least that's what happened to this little lamb -
Nick Boing, an unusual pet with an unusual name. Nick's story began about three years ago when his owner David Palmer and his family were visiting the Goldcliff Nature Reserve in Newport, Wales. They stumbled upon a newborn lamb bleating in the reserve's tall grass. They picked it up and tried to leave it at a nearby farm - However, the lamb refused to go and kept following the Palmer family around until they decided to take him home. After that, there was no going back! Though the Palmers tried to take the lamb back to a farm twice, he refused to settle down with the other sheep. They finally gave up and decided to just keep him.
Now Nick Boing spends his days sitting near the front door, watching the world go by, and nights on the family sofa watching television. He has his own 'mansion' complete with carpet and windows in the yard, but only goes there reluctantly when pushed out at night and that too after a special treat.

Here's a great tasty easy side for that next barbecue...
Sweet Corn Spoon Bread
 
 
1 8.5oz box corn muffin mix
1 14.75 oz can cream style corn
1 15oz can whole kernel corn, drained
1 cup sour cream
2 large eggs
2 T. sugar
1/2 cup (1 stick) unsalted butter, melted
1/2 t. salt
pepper to taste
 
Preheat oven to 375º and lightly grease  8x8 baking dish or skillet with butter or cooking spray.
 
In large bowl, combind muffin mix with sugar, salt, and pepper. Then add in creamed corn, drained corn, sour cream, melted butter, and eggs... stirring until everything is just incorporated.
 
Pour mixture into baking dish or skillet and place in oven. Bake 40-45 minutes, or until toothpick inserted in center comes out clean.
 
Remove and let cool 10 minutes before serving. Use a large serving spoon to scoop onto plates. Enjoy!

When I had gotten home from errands Mike was here. He had mowed the lawns and was weed-eating around the areas when Dave brush-hogged. I was so happy to see him, as the front lawn was hip deep to a tall Indian again!

May 23rd was made for mouth-watering deliciousness. It’s National Taffy Day!  Taffy candy has been made and sold for many years and has become a favorite souvenir of many vacationers.
Salt water taffy in was invented 1883 in Atlantic City, New Jersey.
This confection is made with boiled sugar and butter that is stretched and pulled until it is a chewy consistency that can be rolled and cut. The flavors range from buttery to tart to sweet.  There is something for everyone. Taffy’s colorful displays have tantalized children and adults alike for generations.  And, since today is also Lucky Penny Day, it was also one of the penny candies that once could be bought for a cent.
