Good 58º cloudy morning.........
 
 
The clouds started coming in yesterday, very breezy, and by noon it was dark.
 



 
We kept heating up. Soon it was 81º and by 2:30 it was 87º! 
 
Predictions starting yesterday....
 

 
 
 
Up in the pasture was a turkey vulture....wings out.... with turkeys walking by casually...

After the pastures were brush-hogged, there probably were some critters the vulture was interested in.
 
And Mr. Dove sittin' on the fence....

Penguin Nils Olav has been an honorary member and mascot of the Norwegian King's Guard since 1972. After over 35 years of ‘duty' he was knighted at Edinburgh Zoo. During the ceremony, Nils had a sword dubbed on each side of his head, where his shoulders should be, to confirm his regimental knighthood. A citation from King Harald of Norway was read out, which described Nils as a penguin 'in every way qualified to receive the honor and dignity of knighthood.'
 
 
Recipe: The Ultimate Grilled Cheese from Mr. Food...

"There is no denying it, this is truly the Ultimate Grilled Cheese Sandwich. You see, when we made it, this dish disappeared so fast in our Test Kitchen it barely even had time to cool!"
 
  • 3/4 cup mayonnaise
  • 3 ounces cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 10 slices sourdough bread
  • 4 tablespoons (1/2 stick) butter, softened
 
 
  1. In a medium bowl with an electric mixer, beat mayonnaise and cream cheese until light and fluffy. Stir in Cheddar cheese, mozzarella cheese, and garlic powder; mix well. 
     
  2. Spread each of five bread slices evenly with cheese mixture. Top with remaining bread slices. Spread butter on both sides of the sandwiches. 
     
  3. In a skillet over medium heat, cook in batches until golden on both sides and the cheese is melted.

Later my dinner was Schwans Chicken Lo Mein .... so good and tasty and EASY prep....

Chicken Lo Mein Skillet Meal is a mix of roasted chicken tenderloins, fire-roasted onions, green and red peppers and tender noodles coated with a savory sauce that has hint of soy.

  • Prepare from FROZEN state.
  • 1. Open package and remove sauce pouch. Place sauce pouch into warm water to thaw.
  • 2. Preheat 2 tablespoons of oil in large non-stick skillet over medium heat.
  • 3. Pour remaining contents of bag and 2 tablespoons of water into skillet, stir and cover.
  • 4. Cook for 10 - 12 minutes. Stir occasionally.
  • 5. Add sauce and stir frequently for 1 - 2 minutes.
 
 
Then by 6:30 it looked like rain for sure......
but we didn't get a drop! Apparently it rained south of us in Medford, but bypassed this area totally. Dang!

National Escargot Day is observed each year on May 24th.  This day is in honor of the famous French dish of cooked land snails. Escargot is enjoyed by many. However, it is an acquired taste.  It is usually served as an appetizer in French restaurants.
 Escargot {es.kar.go} is the French word for snail.
The dish of Escargot is usually prepared by removing the land snails from their shells, cooking them with garlic, butter and wine. They are then placed back into their shells with the sauce for serving.    The dish is served with a special fork and tong for easier dining.
