February 2nd

This photo is of this morning 2-2-2016... SNOW!

Quite a bit of the white stuff out there today. Mother Nature knows ahead of time. Yesterday I had 15 does and fawns on my pasture eating grass all day! They knew and had to stock up! These aren't all 15... but when all of them were near the house I didn't want to go out and scare them..
Here's the same pasture this morning...

Pux Phil says an 'early spring' this year. And surprisingly the Iowa votes put Cruz ahead of Trump. A big surprise for me. What happened with Liary Clintoon and Sanders wasn't a surprise. And onto the next bump in the road....... oh the joys of election season. YUCK!!!!

And for your information... I didn't "spread out" the sentences or the cooking ingredients the way they show up. This site has a mind of it's own. No matter how I space stuff, it does it the way it wants to! Grrrrrrrrrrrrrrrrrrrrrrrrrr

This is the blog I posted on this date in 2012.

Just taking another day off.

Ground Hog Day ~Santa Fe Chicken Cheese Casserole ~ Heavenly Hash

Good 29º morning. Cloudy but sun will be out. Promised! Heard geese flying over. Strange sound. First time I heard them when we had just moved here, I was in bed sleeping and started dreaming I was on a crowded freeway in Los Angeles. It was the honking of the geese!!! LOL

Then it was off to the Law Enforcement/Fire luncheon. Such a nice group of guys (yes, me being the only female!). Our LAPD moderator/commentator/founder Hector, bought me a bloody Mary. Thank you Hector! Nice we can cross those cop/deputy lines and be pals! I do recall the lack of "friendliness" when I was in a radio car in their area and would an LAPD officer wave back... Never! :o(

It was a small gathering .... probably 16-20 of us. Mostly LAPD. Most of the 'snow-birds' have left for the winter and warmer climes in their motorhomes .... most to So. Cal. But............... since Saturday is Joe Kirk's birthday... I brought him a 'Snickers cup cake' and he didn't even show up.

Oh Joe, this cupcake made me drool. And you weren't there! Guess I'll just have to eat it myself. The guys at our table volunteered!

Then to Jeannie and Bills for wine and chat. Always a good time.

Today is a special anniversary... my friends John (LASD ret) and Trish Bowler are celebrating number 49! Happy Anniversary kids!           ** now it's #53!!!

1 can (15 oz.) black beans, rinsed

1 can (14.5 oz.) no-salt-added diced tomatoes, drained

2 green onions, sliced

1 tub (10 oz.) PHILADELPHIA Santa Fe Blend Cooking Creme, divided

3 flour tortillas (6 inch)

3/4 cup KRAFT Mexican Style Finely Shredded Four Cheese, divided

HEAT oven to 375ºF.
COMBINE first 4 ingredients in large bowl. Add 3/4 cup cooking creme; mix lightly.
SPOON 1/3 of the chicken mixture into 9-inch pie plate; top with 1 tortilla, half the remaining chicken mixture and 1/4 cup shredded cheese. Cover with second tortilla, remaining chicken mixture, 1/4 cup shredded cheese and remaining tortilla. Top with remaining cooking creme and shredded cheese; cover.
BAKE 20 min. or until heated through; uncover. Bake 5 min. or until cheese is melted.

Heavenly Hash Day
(???)
February 2 is National Heavenly Hash Day. But which heavenly hash?
If someone offers you Heavenly Hash, you may want to clarify:
Is it a fruit salad bound with sour cream or whipped cream, or a chocolate confection or baked good filled with marshmallows and nuts?

http://whenthedinnerbellrings.blogspot.com/2010/11/heavenly-hash.html

http://dennysfoodandrecipes.blogspot.com/2010/09/cake-tuesday-super-sweet-heavenly-hash.html
The fruit salad version of Heavenly Hash is a traditional Southern dish. It began as a Christmas recipe with red maraschino cherries, green grapes, pecans and other ingredients folded into whipped cream.
Over generations the recipe evolved, with everyone inventing his or her own hash (the term, after all, indicates a jumble or muddle of ingredients).

This morning it is 34º and we had a sprinkling of snow in the night..

Still working on projects. This blog I wrote in 2014 on this date:

MRI ~ Dee ~ Your Roots ~ Veggie/Crab/Noodle Stirfry ~ Baked Alaska

Happy

Good 32º foggy morning. Sigh.................

Yesterday was a trip to Medford for an MRI of my cervical spine.

The neurology nurse called and said they found "multi levels of degenerative changes" ... in other words "arthritis". No Stenosis. My neck is always sorta stiff and I get a dizziness but it stops when I bend my neck hard backwards or to the side. Weird. Nobody can figure this out. Again, sigh.....

After the trip to the med center I drove to Grants Pass and took some flowers to Dee.
She wasn't in her bed, had surgery yesterday morning, so I left the flowers with the desk person. I hope she is doing ok. Dale said her surgery was more extensive than originally thought. She will need some rest up time. Guess you will be the nurse now Dale!

Here is something interesting Cyndi Moreno (wife of the infamous LASD ret Pete) posted on her FB page....
and... here all this time I thought I was Scotch/Irish... apparently I'm Greek!

Made a great stirfry to clean out the fridge. Some fake crab, fake lobster (they both taste the same!!), veggies (squash and green beans), Yakisoba noodles .... sauteing them in garlic infused oil...
I heated and separated the noodles, added in some orange sauce, and some cheese.
OMGOOOOOOOOD!!!!!

Yesterday I took Maggie to the vets. As I pulled into the parking lot for our 1pm appointment, Dr. Ron was backing his truck up and was leaving. He got out and said I was 45 min early. Sum ting wong. Someone wrote down the wrong time. "1pm" was written on my receipt, so it must have been put in the book wrong. Anyway, he's so nice. Said what the heck, "we'll take the stitches out right here" while Maggie sits in the car. Cool. He went in the office and came out with gauze and forceps and we had a parking lot procedure!

Maggie was really happy, regardless of the look on her face. She didn't have to go inside and wait and then have a thermometer stuck in her butt!!! She was shaking at first, but calmed right down. She will now have a scar and a bald spot on her shoulder.

We came home and I made the peanut butter cookie waffles. You have to add about 3 T of flour to the mix, as it is very soft and hard to get out of the waffle iron in one piece. I used a sharp pointed knife to lift the edge and tongs to lift each one out.

But, once they cool they are crispy and GOOD!!!!

Dinner:

I cooked a whole chicken in the crockpot and added a box of Imagine Potato Leek Soup. When done, drained chicken in a colander and refrigerated. Refrigerate the soup also so the fat can be taken off the top. Then heat the soup, adding some of the chicken torn off and/or cut into bite size. Add mushrooms (I used the shitake dried), garlic, onion, and seasoning if needed. Place the frozen chicken/vegetable potstickers in a frying pan and coat with oil. Add 2/3 cup water, turn on med high, cook with lid on for about 8 minutes ... until water evaporated, then sauté until browned on each side. Add to soup.......

I added some dried basil at the last. OMG GOOD!

All I know. Nuff said. Ciao.
