Good 28º foggy morning.
 
Yesterday we started frozen and foggy......


 
So did Grants Pass .....

 
And the geese were on my barn roof honking and honking....

Finally after 9am the fog lifted and we had blue sky and sunshine. We topped at 65º.

The Amish are known for many homestyle dishes, and this warm and comforting Amish Country Casserole is no exception! It's so tasty, it's no wonder it's been passed down from generation to generation.

 

  • 1/2 pounds ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (16-ounce) package wide egg noodles
  • 1 (10-3/4-ounce) can condensed tomato soup
  • 1 (10-3/4-ounce) can condensed cream of mushroom soup
  • 1/4 cups milk
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

 

  1. Preheat oven to 375º. Coat a 3-quart casserole dish with cooking spray.
  2. In a large skillet over medium heat, saute beef, onion, and garlic 5 to 7 minutes, or until browned; drain off liquid.
  3. Meanwhile, in a soup pot, cook noodles according to package directions; drain well and return noodles to pot. Add ground beef mixture and remaining ingredients, except paprika; mix well. Place in casserole dish and sprinkle with paprika.
  4. Cover and bake 30 to 35 minutes or until heated through.

While February 18 is observed annually as National Drink Wine Day, it would be a shame to celebrate only one day a year.  Perhaps this day is just a reminder to drink wine.
Wine does have its benefits after all. Moderate drinkers of wine have lower risks of liver disease, type II diabetes, certain kinds of cancers, heart attack and stroke.  It also can reduce the bad cholesterol (LDL) and increase the good (HDL).
Drinking wine includes other benefits as well. When paired with the right meal, it enhances the flavors of spices, fruits, and sauces. A glass of wine helps relax us. Learning about wine keeps our minds sharp, too. Since the fruits, regions and the making of wine have such a complex story, those who delve into find themselves traveling to learn more.

 

Always drink responsibly and try a new wine.
