Interesting about Goddess Nike...
 
You can't buy publicity like this. And in Nike's case, it didn't need to. Nike, the Greek goddess of victory, has appeared on the Olympic Summer Games medals nearly every four years since the 1896 games in Athens, Greece.
 

 
That means the namesake of the sporting goods giant will be on the victory stand in Tokyo over and over again this month. The obverse of the Olympic medal features Nike holding a palm frond in her right hand and a winner's laurel crown in her left. The sports equipment company takes its name from the Greek goddess Nike.

Sculptures of Nike were extremely common in Ancient Greece and used both in secular public spaces of many categories as well as in the temples of other gods. She was often seen as a miniature sculpture in the hand of Athena and Zeus. Nike was also depicted with famous athletes, symbolizing their victories. In public places as well as temples, she was depicted in sculpture to commemorate victories in war and competitions.

While Nike was often depicted in sculpture and often included in the cults of other gods, particularly Zeus and Athena, only a few sanctuaries dedicated solely to her are mentioned. Pausanias noted that there was an altar solely to Nike in Olympia close to the altar of Zeus Purifier, and he also noted the temple of Nike in Athens: "On the right of the gateway [of the Akropolis (Acropolis) in Athens] is a temple of Nike Apteron (Wingless)."

Mama always said to eat your veggies. And what better way than in these tasty spinach roll-ups? We pumped up the flavor by adding a Ranch-style dressing mix and a jar of those crunchy little bacon bits.

 

  • 1 (10-ounce) package frozen chopped spinach, thawed and well drained
  • 1 cup mayonnaise
  • 1 (8-ounce) container sour cream
  • 3 scallions, thinly sliced
  • 1 (.4-ounce) envelope Ranch-style dressing mix
  • 1 (3-ounce) package bacon bits
  • 9 (10-inch) flour tortillas

 

 

  1. In a large bowl, combine all ingredients except tortillas; stir well.
     
  2. Spread mixture on tortillas, distributing evenly. Roll up jelly roll fashion; wrap each in plastic wrap.
     
  3. Chill 4 to 6 hours. Cut into 1/2-inch-thick slices and serve.

For a few days I am babysitting my "granddog" Dash. He loves to lay in my lap when it's TV time!! Such a sweetie. He's a British Jack Russell....

National Vanilla Ice Cream Day on July 23rd tips its hat at the second most popular flavor in America. Take a bow, vanilla. I scream, you scream, we all scream for…VANILLA ICE CREAM!! Of course, the day is part of  National Ice Cream Month and not too far behind National Ice Cream Day.
Since Americans love vanilla ice cream so much, it shouldn’t come as a surprise that vanilla is the most common flavoring in North America for ice cream. In fact, many people consider vanilla ice cream to be the default flavor.
Many may be familiar with Thomas Jefferson’s vanilla ice cream recipe. The third president of the United States may have discovered vanilla flavor while visiting France. While he wouldn’t have been the first to savor the delicious taste of vanilla ice cream, Jefferson enjoyed jotting down recipes. The same applied to ice cream. He also produced a handwritten copy of a vanilla ice cream recipe in the 1780s. Only ten copies remain. In fact, the Library of Congress houses one copy that has a cookie recipe on the flip side. Today, the ice cream parlor at Mt. Rushmore in South Dakota serves the same recipe so that anyone can have a taste.

Dash is so adorable! I have loved that breed ever since "Eddie" on Frazier.

Eric and I went to a tapping of that show and saw the trainer give Eddie directions off camera. It was amazing how smart he was.

I will be pup sitting our grand pup, Delilah, next week while the kids go to Universal Studios for a few days. They will have to board their newest pup, Sandy. She isn't house broken and I made it clear I will never pup sit both dogs. Usually I am sitting for their two children and one dog and that's enough for me.
