Good 25º everything is frozen morning. 
 
 
We started with the fog yesterday
 


 
And then before 9am it started dissipating..... and there was blue sky and sun coming through......

The rest of the day was lovely.
We topped at 65º.

Interesting about "wiener dogs".....
 


The dachshund, also known as the wiener dog, badger dog, or sausage dog, is a short-legged, long-bodied, hound-type dog breed. They may be smooth, wire, or long-haired.

The standard sized dachshund was developed to scent, chase, and flush out badgers and other burrow-dwelling animals, while the miniature dachshund was bred to hunt small animals such as rabbits and mice. In the Western United States, they have also been used to track wounded deer and hunt prairie dogs.

A typical dachshund is long-bodied and muscular with short stubby legs. Its front paws are disproportionately large, being paddle-shaped and particularly suitable for digging. Its skin is loose enough not to tear while tunneling in tight burrows to chase prey. The dachshund has a deep chest which provides plenty of space for heart development and lung capacity. Its snout is long.

Dachshunds are playful, but as hunting dogs can be quite stubborn, and are known for their propensity for chasing small animals, birds, and tennis balls with great determination and ferocity.

Looking for a way to do dinner a little differently? Make our Italian Hoagie Stromboli! It all starts with one of our go-to shortcuts, refrigerated pizza crust; from there, this dinner is filled with the succulent meats, cheeses, and seasonings of Italy. When it's all rolled together and hot out of the oven, you'll have a dinner that tastes like it came from everyone's favorite pizza parlor. 
 

 
  • 1 (13.8-ounce) package refrigerated pizza crust
  • 6 slices deli-style ham
  • 12 thin slices deli-style pepperoni
  • 8 slices provolone cheese
  • 1 cup roasted red pepper strips, patted dry
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Cooking spray
  • 1 tablespoon grated Parmesan cheese

 

  1. Preheat oven to 425º. Coat a baking sheet with cooking spray.
  2. Unroll pizza crust dough onto a work surface. Layer evenly with ham, pepperoni, provolone cheese, and roasted red peppers. Sprinkle with Italian seasoning and garlic powder.
  3. Starting at the long end of the dough, roll up jelly roll-style and place on baking sheet seam-side down. Lightly spray dough with cooking spray then sprinkle with Parmesan cheese.
  4. Bake 15 to 18 minutes or until golden. Let sit 3 to 4 minutes before cutting into 8 slices.

On National Cheese Lover’s Day, don’t feel bleu, throw a feta or act capricious. January 20th is a gouda day to kummin over and have some cheddar or asiago or fontina!
There is no firm evidence of how cheese making was discovered. but legend tells us it was likely by chance that someone created the first cheese. Thousands of years ago, people transported milk and stored it in sheep stomachs. Left to sit a few days, the proteins would separate into curds and whey. From there, preserving the solids with salt may have seemed a logical next step. Salt was a highly valued preservative in ancient times.
The earliest record of cheese making dates back to 5,500 BCE in what is now Poland.  Today there are over 1,400 varieties of cheese.
Basic Cheese Making
The basic principles behind making cheese are quite simple. Let the milk sour (or scientifically, coagulating the casein protein). Then separate the curds (solids) from the whey (liquid). The curds are then salted and left to age.
Bacteria, enzymes or fungi may be added at various stages. These along with the type of milk, temperature, time and moisture are all controlled to produced the desired taste, color and texture. Herbs and spices may also be added.
The nutritional value of cheese varies depending on the variety. Cottage and mozzarella cheese are at the lower end of fat and calories per serving while mascarpone and cream cheese pack it on. Marscapone makes desserts like tiramisu rich and creamy.

In honor of cheese- lunch was nachos.

I enjoy Presidential inaugurations- a break from the contentiousness of opposing forces in governing the Republic. The highlights today for me were J Lo and Garth Brooks singing- the poetry of the young Poet Laureate.
