Rain ~ Picture of the Day ~ Little Rock and Denver ~ Peanut Butter Cream Cheese Pie ~ National Lemonade Day


Good 42º foggy morning. 



Yesterday first thing the clouds moved in. The rain started just before 10am and lasted 5 minutes! Then a little after 11am it started raining again. On and off, on and off.... that lasted for 5 minutes. Just before noon it started again. Then it FINALLY started coming down hard!!!

Interesting about these state capitals....


Little Rockcity, capital of Arkansas, U.S. It is the seat of Pulaski county, on the Arkansas River in the foothills of the Ouachita Mountains in the central part of the state. In 1722 Bernard de la Harpe, a French explorer, saw on the bank of the Arkansas River two conspicuous rock formations, which he reputedly named La Petite Roche and La Grande Roche. Near the smaller rock was a Quapaw Indian settlement, which La Harpe made his trading post. The “little rock” later became the abutment for a railway bridge. The “big rock,” 2 miles further upstream, was the site of an army post and later a veterans hospital.
In 1812 William Lewis, a trapper, built his home at the “little rock.” In 1819 Arkansas became a territory, with its capital at Arkansas Post. The site of Little Rock was surveyed in 1820, and the territorial capital was moved there the next year. The capitol building where the legislature met from 1821 to 1836 is preserved in the Territorial Capitol Restoration, along with a block of buildings of the period, including the Old State House (designed by Gideon Shyrock and the second of Little Rock’s three state capitols) and the first print shop of the Arkansas Gazette, which merged in 1991 with the Arkansas Democrat to form the Arkansas Democrat-Gazette. Little Rock was strongly anti-Union at the outbreak of the American Civil War, and the Federal arsenal was seized by state authorities in 1861. In September 1863 Federal troops under General Frederick Steele occupied the city and established a pro-Union government.

The Colorado Territory was created on February 28, 1861, Arapahoe County was formed on November 1, 1861, and Denver City was incorporated on November 7, 1861. Denver City served as the Arapahoe County Seat from 1861 until consolidation in 1902. In 1867, Denver City became the Territorial Capital. With its new-found importance, Denver City shortened its name to just Denver. On August 1, 1876, Colorado was admitted to the Union.
Denver City was founded in November 1858 during the Pikes Peak Gold Rush as a mining town in western Kansas Territory. That summer, a group of gold prospectors from LawrenceKansas, started a settlement on the banks of the South Platte River. They called it Montana City. This was the first settlement in what was later to become the city of Denver. The settlement faded quickly. By the summer of 1859 it was abandoned in favor of Auraria (named after the gold mining town of AurariaGeorgia), and St. Charles City.
Former Kansas Territorial Governor James W. Denver visited his namesake city in 1875 and in 1882.

If you're a fan of peanut butter pie, then you'll love this extra creamy spin on a classic. You see, the whipped topping makes for an airy filling that's full of peanut buttery goodness! You'll find dessert paradise in this Peanut Butter Cream Cheese Pie.

 

  • 1 cup creamy peanut butter
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cups confectioners' sugar
  • 2 teaspoons vanilla extract
  • 1 (12-ounce) container frozen whipped topping, thawed, divided
  • 1 cup coarsely chopped peanut butter cups, divided
  • 1 (9-inch) chocolate pie crust

 

  1. In a large bowl with an electric mixer, beat peanut butter and cream cheese until smooth. Beat in confectioners' sugar and vanilla until smooth. Fold in 3 cups whipped topping and 3/4 cup peanut butter cups. Spoon mixture into crust. Top with remaining whipped topping and remaining peanut butter cups.
  2. Chill 8 hours or overnight, until firm.

NATIONAL LEMONADE DAY HISTORY

Michael Holthouse founded National Lemonade Day in 2007 in his hometown of Houston, Texas to allow youth to sample running small businesses – like a lemonade stand. Today he and LemonadeDay.org are partnered with Google to continue to bring the entrepreneurial spirit to the youth of America.

Interesting read about Little Rock, capital of my home state. My mother used to take me to that building to see the Nativity Scene every Christmas. It's a beautiful sight from the freeway driving into the city.

The other day I posted that sign about how to treat woman during quarantine on my Face Book page. Funny! Love it!
