Weather ~ Weather Predictions ~ Picture of the Day ~ State Capital Names ~ Creamy Ham Casserole ~ Pete Loomis ~ National Prime Rib Day

Good 50º dark cloudy morning.

Here's how we started yesterday....

We stayed nice most of the day. Late afternoon winds and we topped at 77º.

Here are our weather predictions for this area.....

Picture of the Day ...   uh huh!

Interesting
There are a total of four state capitals in the United States that are named after former presidents. Lincoln, Nebraska, is of course named after our 16th President Abraham Lincoln.

 Madison, Wisconsin is named after our 4th President James Madison;

Jefferson City, Missouri is named for our 3rd President Thomas Jefferson;

and Jackson, Mississippi, is named for the 7th President Andrew Jackson.

In addition, our national capital Washington, D.C., is of course named after George Washington, the 1st President of the United States.

As for the capital of California...
Sacramento was named after the Sacramento River, which forms its western border. The river was named by Spanish cavalry officer Gabriel Moraga for the Santisimo Sacramento (Most Holy Sacrament), referring to the Catholic Eucharist.

From Mr. Food....

This Creamy Ham Casserole is an easy and simple ham casserole recipe that uses up your leftover ham and goes together in a flash. This is comfort food at its best, and it couldn't be easier to throw together, even on a busy weeknight! So the next time you're looking for a simple casserole recipe, just grab this one and get ready for a delicious ham casserole that'll please the whole gang.

  • 8 ounces medium egg noodles, uncooked
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped onion
  • 1/4 cup sliced celery
  • 2 cups chopped cooked ham
  • 1 (10-3/4-ounce) can cream of mushroom soup, undiluted
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 2 tablespoons chopped pimiento, drained on paper towel

  1. Preheat oven to 375º. Coat a 1-1/2-quart baking dish with cooking spray. Cook noodles according to package directions; drain.

  2. Meanwhile, in a large skillet over medium-high heat, heat oil until hot. Add onion and celery and cook 6 to 8 minutes, or until tender, stirring occasionally. Stir in ham and heat 2 to 3 minutes. Remove from heat and stir in soup, sour cream, 1/2 cup cheddar cheese, the pimiento, and noodles. Spoon into baking dish.

  3. Cover and bake 30 to 35 minutes, or until heated through. Sprinkle with remaining 1/2 cup cheese, and bake, uncovered, an additional 5 minutes, or until cheese is melted.

***Here's a great way to use leftover ham. Or, if you don't have any leftovers, take advantage of cubed cooked ham that's available in the meat counter of your supermarket. When you need just a few cups of ham, such as in this deliciously creamy recipe, it gives you an inexpensive head start for preparing a variety of meals.

Special birthday today, Pete Loomis (aka Loom Loom and LASD ret) is celebrating. HAPPY BIRTHDAY PETE!!!

Historically this date...
1296 – Battle of Dunbar: The Scots are defeated by Edward I of England.
Dunbar is a family name, my Mom's mother's maiden name , and King Edward invaded Scotland because he was pissed that King John Balliol refused to support the English military action in France. He was a dork anyway, but caused battlefield losses. The Dunbar Castle is the remnants of one of the most mighty fortresses in Scotland. What it did look like and today the ruins...

Here is my foolproof way to cook prime rib, perfect every time:

Make a rub of salt and pepper and garlic and/or onion powder and or any other type of herb you like and you can even mix it with butter or olive oil .... rub onto roast. Put in roasting pan, turn oven to 550º. When oven is ready put in the roast and cook it 5 minutes for every pound for rare, 6 minutes per pound for medium. Then turn off the oven and DO NOT OPEN THE OVEN DOOR FOR 2 HOURS! Done to perfection.

I am drooling over the prime rib photo...

Thank you for the Scottish history. I am pen pals (social distance version of dating) with a gentleman descended from Fraser and Moffat clans. The Fraser’s fought with Robert the Bruce.

Oh I love going to Lawry's too. Haven't been in years tho.

That's the way I have cooked prime rib too. However, I add some time to mine because we don't like it so rare. Also we don't like leftover prime rib so we have to eat it all at one time. :) Not hard to do. :)

Hugs, XO Trisha

p.s. Your picture of the day is oh so right!
