Yesterday afternoon I picked up Kristen at the airport. She will stay through the weekend.  So GREAT to see my girl!!! ♥
Dude was happy happy to see her too....

Cheesecake is a beloved dessert around the world. While many assume that it has its origins in New York, it actually dates back to ancient Greece. In Greece, cheesecake was considered to be a good source of energy, and there is evidence that it was served to athletes during the first Olympic Games held in 776 B.C. Greek brides of the era also cooked and served cheesecake to their wedding guests. The writer Athenaeus is credited for writing the first Greek cheesecake recipe in 230 A.D. It was not until the 18th century, however, that cheesecake would start to look like something we recognize in the United States today.




Impossibly Easy Cheesecake

3/4 cup milk
2 t. vanilla
2 eggs
1 cup sugar
1/2 cup Original Bisquick mix
2 pkgs (8oz each) cream cheese, cut into about 1/2" cubes and softened


Heat oven to 350º. Grease 9" pie plate.


Place milk, vanilla, eggs, sugar and Bisquick mix in blender. Cover and blend on high 15 seconds. Add cream cheese. Blend 2 minutes longer. Pour into pie plate.


Bake 40-45 minutes or until knife inserted in center comes out clean. Cool. Refrigerate until ready to serve.


Topping, if desired: Stir together 1 cup sour cream, 2 T. sugar, 2 T,. vanilla. Mix well and spread over top of completely cooled cheesecake.


** Drizzle with fudge and caramel toppings and sprinkle with chopped pecans... or serve with fresh fruit.
