Happy Throw Back Thursday.....10 years ago at 7 Oaks Farm... Sami and Tucker

Yesterday started off cold, 32º again, clear and then a few clouds started moving in.  We warmed to 67º.

Picture of the Day... bizarre mailbox!

Interesting about the first national park...

During his Presidency, Abraham Lincoln signed Senate Bill 203. It effectively gave California the Yosemite Valley and Mariposa Big Tree Grove area as protected wilderness areas. It was the first time in US history that land was designated for public use and preservation. The bill became known as the Yosemite Pact, signed on June 30,1864. It is viewed by many as the birth of the national park system in the US.
Today the area is part of Yosemite National Park located in western Sierra Nevada of Central California. Designated as a World Heritage site in 1984, Yosemite is internationally recognized for its granite cliffs, waterfalls, clear streams, giant sequoia groves, lakes, mountains, meadows, glaciers, and biological diversity.
But it was the advocacy of citizens concerned by the effects of commercial interests that started the initiate over 150 years ago to preserve the area. Today, we are indebted to the prominent citizens who advocated for protection of the original areas.Through their actions, a park bill was prepared, eventually passed both houses of the 38th US Congress, and was signed by the President, transpiring while the devastation and ravages of the Civil War dragged on.
The Yosemite Pact set a precedent for the creation of Yellowstone National Park as the first national park in 1872.

One-Pan Tuscan Chicken Pasta Bake

8 oz (2 3/4 cups) uncooked campanelle pasta
2 cups chopped cooked chicken (get a cooked rotisserie chicken)
1/3 cup sun-dried tomatoes in oil, drained and chopped from 8oz jar
 1 15oz jar Alfredo sauce
2 cups water
1/2 t. Italian seasoning
1/2 t. garlic powder
1/4 t. crushed red pepper flakes
2 cups packed fresh baby spinach leaves
1/2 cup shredded mozzarella cheese
chopped fresh basil leaves if desired
Heat oven to 375º. Spray 13x9 glass baking dish with cooking spray.
In large bowl mix pasta, chicken, tomatoes, Alfredo sauce, water, Italian seasoning, garlic powder, and pepper flakes. Pour mixture into dish and cover tightly with foil. Bake 40 minutes.

Remove dish from oven, stir mixture thoroughly. Add spinach and stir until well mixed. Sprinkle with cheese.

Bake uncovered 5-7 minutes until pasta is tender and cheese is melted. Let stand 10 minutes. Garnish with basil.
***
  • For this recipe, we used sun-dried tomatoes from a jar packed with oil and herbs. You'll often find these tomatoes near the shelf-stable olives and pickles at the grocery store.
  • Adjust the amount of crushed red pepper flakes to your liking—add an extra pinch or two if you like a little heat.
  • Covering the dish with foil during the first part of baking helps cook the pasta while preventing it from drying out.
  • Top each serving with grated Parmesan for more cheese flavor.

Today is a very special birthday... Jean Schumacher is celebrating. Jean is Tucker and Sami's other grandma! HAPPY BIRTHDAY JEAN! (We will celebrate SOON!) xo

All I know. Nuff said. Happy TBT. Ciao.

On the first Wednesday in October, National Coffee with a Cop Day brings men and women in uniform together with their communities to connect over a cup of "joe".
Inspired by the cliche about officers and their coffee shop donuts, National Coffee with a Cop Day encourages communities to sponsor an event that will bring citizens and those on patrol together. The opportunity for open dialogue, break down barriers and improve communication creates a valuable bridge to relationships in our communities.
HOW TO OBSERVE
While many cities and towns across the country hold Coffee with a Cop events throughout the year, the first Wednesday in October is National Coffee with a Cop Day. Plan one now and several later in the year!
HISTORY
In 2016, the first National Coffee with a Cop Day took place across the nation. The idea was launched by the members of the Hawthorne Police Department in Hawthorne, California in 2011. They sought ways to interact with their community every day more successfully. As a result, they established a Coffee with a Cop events to do just that. Throughout the year they make meaningful connections, and the idea has spread across the country to all 50 states!
