Yesterday was a beautiful day. Clear and sunny, and by noon we were only at the high 70ºs! Then, the heat kept rising and rising.. we topped at 96º.

The 50 State Quarters Program (enacted December 1, 1997) was the release of a series of circulating commemorative coins by the United States Mint. From 1999 through 2008, it featured unique designs for each of the 50 US states on the reverse of the quarter.
The 50 State Quarters Program was started to support a new generation of coin collectors, and it became the most successful numismatic program in history, with roughly half of the US population collecting the coins, either in a casual manner or as a serious pursuit. The US federal government so far has made additional profits of $3.0 billion from collectors taking the coins out of circulation.
In 2009, the US Mint began issuing quarters under the 2009 District of Columbia and US Territories Program. The Territories Quarter Program was authorized by the passage of a newer legislative act, H.R. 2764. This program features the District of ColumbiaPuerto RicoAmerican SamoaGuam, the United States Virgin Islands, and the Northern Mariana Islands.

 
 
 

Chicken Bacon Ranch Crescent Pie


 
Prep time 25 min ~ Total time 1 hour 5 min ~ 11 Ingredients ~ 8 Servings
 
1 8oz pkg cream cheese, cut into cubes
1 cup shredded sharp cheddar cheese
2 T. milk
2 cups cooked chicken (get one of those rotisserie cooked chickens from the grocery store)
1/2 cup chopped cooked applewood smoked bacon (12 oz pkg)
1/2 cup ranch dressing
3 T. chopped fresh chives
1 8oz can Pillsbury refrigerated crescent dinner rolls
4 sharp cheddar cheese sticks (.8oz), cut in half crosswise
1 T. melted butter
1/4 t. garlic powder

      Heat oven to 375°. Spray 9-inch pie plate with cooking spray. Place large piece of heavy-duty foil on lower oven rack to catch any cheese that might bubble over.

      In medium microwavable bowl, mix cream cheese, shredded cheese and milk. Microwave uncovered on High 1 to 2 minutes, stirring until cheese is melted.

      In large bowl, mix chicken, bacon, ranch dressing and 2 tablespoons of the chives; stir in cheese mixture until thoroughly combined. Transfer mixture to pie plate.

      Separate dough into 8 triangles. On shortest side of each dough triangle, roll up one cheese stick piece until covered. Place dough on top of mixture in spoke pattern with points toward center and making sure cheese edges are within edges of pie plate.

      In small bowl, mix melted butter and garlic powder. Brush mixture on top of crescent dough. Loosely cover crescent edges of pie plate with 2-inch wide strips of foil to make a ring.

      Bake 20 minutes; remove foil, and continue baking 8 to 10 minutes or until filling is heated through and top is deep golden brown. Let stand 10 minutes. Before serving, garnish with remaining 1 tablespoon chives.

July 21st dedicates a giant menu of items to National Junk Food Day. Each year, the day permits us to chow down on the foods we usually don’t include in our daily diet. Junk foods, by definition, typically contain high fats, sugars, salt, and calories and very little nutritional value.
With the advent of packaged foods during the late 1800s, junk food made its way into American life. Still, home-cooked meals remained the standard for several more decades. Eventually, after World War II, the artery-clogging industry took off. Since the population ate out more, traveled more, the industry primed to produce products at an increased rate.
From the frozen food aisle to fast food chains, a myriad of choices for consumers flooded the market. Potato chips, baked goods and so much more filled supermarket shelves, prepackaged and ready to go.
By the 1970s, junk foods earned a name and a bad one, too. Michael Jacobson, a microbiologist, is credited with coining the phrase. He also set out to curb our appetite for the high sugar, high salt, high preservative foods Americans consumed at an alarming rate.
While deep-fried, fat-laced foods increase our waistlines, cholesterol, and blood sugar numbers, an occasional indulgence shouldn’t impact a healthy, diverse diet and lifestyle.  Also, producers make healthy versions of our favorite junk foods to entice us to enjoy a little.

Happy July 21st. The only thing which may save me from junk food is that after play-date with the grandkids- I may not get out of my slippers and nightclothes.

I completely forgot about Hemmingway's home being open to the public. Who doesn't love his writing? Our oldest son, before he became a mountain man, a high school English teacher said he understood Hemmingway's writing better than any previous student. That's a compliment.

To walk on the moon. Not my dream- but I am glad that it was for others. What wonders of daily life resulted from the adventure of our lifetime. So far.

Friends visited Hemingway's home a few years ago and said the cats run the place! One was very friendly and got in Dave's lap. No thanks, L, no space trip for me either. xo
