Interesting about bamboo......
Bamboo is the fastest growing plant on the planet. The world record for the fastest growing plant belongs to a certain species of bamboo, which has been found to grow at up to 35 inches per day or at a rate of .00002 mph. Bamboo can grow under various climate conditions, but it prefers tropical climate. Besides low cost of maintenance, bamboo has numerous applications. It can be used in medicine, in the building industry, and in the production of various woody objects. There are almost 1500 species of bamboo. The largest species of bamboo can reach 1300 feet in height.
My pal, Trish Bowler (wife of the infamous John, LASD ret) shared this from a friend of hers who posted it on FB about 6 years ago...
Zucchini Side Dish
Slice zucchini in half lengthwise. Take a slice off the bottom to keep it stable. Scoop out the center where the seeds are. Brush with olive oil and top with garlic powder or crushed garlic. Arrange halved grape tomatoes in the groove, salt and pepper. Add diced cheese between the tomatoes and sprinkle with bread crumbs. Bake 375º 20-30 minutes, until soft.

The Kentucky Derby is a tradition that takes place on the first Saturday in May.
Its long and storied history brings out a taste for mint juleps, colorful sun hats and a thrill for the race. The jockeys and horses will prepare for the day at Churchill Downs in Louisville, Kentucky. The first in the Triple Crown series, The Kentucky Derby will be followed The Preakness Stakes and The Belmont Stakes. While both The Preakness and The Belmont are the older races, The Kentucky Derby has run continuously since its inception in 1875.
The beautiful horses and the bustling crowds under the spring sunshine make for an exciting day of racing. Add to the months of training and any money at stake, and the nervous butterflies of the event
HOW TO OBSERVE
The Kentucky Derby is broadcast live, so anyone can enjoy the thrill of the race. Tune in, or go to the race. Pick your horse and cheer for place, show or win!
HISTORY
The Kentucky Derby’s first race took place on May 17, 1875. It was inspired by the Epsom Derby in England attended by the grandson of Meriwether Lewis Clark. In 1872, William Clark traveled to Europe and developed a taste for horse racing after his experiences at the Epsom Derby. Upon returning to the U.S., he pursued creating a Thoroughbred racetrack in Kentucky. In 1875, the Kentucky Derby was born in Louisville and has remained ever since.

Perhaps this is the year I will try a mint julep.
Thank you for the reminder there is still a veggie to plant- zucchini.
It is so wondrously versatile.
Have a great weekend.
Thanks for the zucchini recipe. I had forgotten about it. Maybe I will try it again.
Your Schwans dinners look so yummy. I will have to order them again when this crowd moves to their new homes.
A few yeas ago my friend here in Diamond Bar went to Kentucky Derby. Her son works with the race horses and she owns horses. She shared photos of herself all dressed up with a big lovely hat drinking a mint julep. Fun!
