Rain Predictions ~ Clouds/Sun ~ Picture of the Day ~ Bats ~ Natalie Wood's Beef Stroganoff ~ National Vietnam War Veterans Day

Good 38º somewhat cloudy morning.

More rain predicted for yesterday and it's supposed to stop for today and Saturday. We'll see, the rain never showed here yesterday. Had a light morning to start and then clouds and a blue sky peeking through and some sun.........

Here are the predictions through Monday....

Picture of the Day.......

Limestone pinnacles seen in China's Zhangjiajie National Forest Park are what remain of quartzite sandstone mountains after millions of years of water erosion.

Interesting about bats...........

Such mammals as flying squirrels
,

gliding possums
,
and colugos
,
can't actually fly: they just glide for short distances. Only Bats are capable of true and sustained flight.

They belong to the order Chiroptera, the second largest order of mammals on Earth. Their forelimbs help them to fly, as they form webbed wings. But, unlike birds, bats don't use their entire forelimbs to fly: they just flap their spread-out digits, which are very long and covered with a thin membrane or patagium. Bats can fly at speeds of up to 60 miles per hour!
There are approximately 1,240 bat species divided into two suborders: the less specialized fruit bats, or flying foxes, and the highly specialized and echolocating microbats. About 70% of bats feed mostly from insects. The vampire bats feed on blood (such a practice is called hematophagy) and some species, for example fish-eating bats, prefer feeding from animals. Listening to echoes, bats can find their food in complete darkness. More than half of the bat species living in the USA are considered endangered.

From my Hollywood Cook Book.....
Natalie Wood's Beef Stroganoff

2 pounds sirloin beef, cut into thin strips
3/4 cup butter
3 medium onions, chopped
3 cups thinly sliced mushrooms
1 cup tomato sauce
1/2 cup water
3/4 cup sherry
1 cup sour cream
salt and pepper
flour

Dredge meat in flour. Brown quickly in half of the butter. Remove meat from skillet and add remaining butter. Add onions and mushrooms. Cook 5 minutes. Add meat, sprinkle salt and pepper. Add tomato sauce, sherry, and water. Bring slowly to boil. Cover and simmer until tender, about 1 1/2 hours. Just before ready to serve stir in sour cream. Serve on boiled rice.

National Vietnam War Veterans Day on March 29 honors the men and women who served and sacrificed during the longest conflict in United States history.
It was on March 29, 1973, when combat and combat support units withdrew from South Vietnam. Generations later, Veterans of this time period are gaining the respect that was not so freely given upon their return. Involving five U.S. presidents, crossing nearly two decades and 500,000 U.S.military personnel, it left an indelible mark on the American psyche.
Returning Veterans did not always receive respectful welcomes upon their arrive on American soil. There were 58,000 killed, never to return. National Vietnam War Veterans Day recognize the military service of these men and women who answered the call to service their country when she needed them. They didn’t make the decisions to go to war.
On National Vietnam War Veterans Day, we recognize the service and duty rendered by all servicemen and women of this era.
HOW TO OBSERVE
Around the country, commemorative events, speeches and luncheons are being held inviting Vietnam Veterans as honored guests.  Thank a Vietnam Veteran.  Buy them a drink or lunch.
HISTORY
U.S. Sens. Pat Toomey, R-Pa., and Joe Donnelly, D-Ind., introduced legislation in 2017 to honor Vietnam Veterans with a day on the anniversary of the withdrawal of military units from South Vietnam. President Donald Trump signed the Vietnam War Veterans Day Act on March 28, 2017, calling for U.S. flags to be flown on March 29 for those who served.

I haven't made stroganoff in forever. This recipe- the ratio of sherry is definitely going to be reduced so as to not overpower the flavor. If I'm a good girl, it will be served with brown rice and some colorful vegetable. Before we taste with our tongue, we taste with our eyes. Contrast brings up the flavor- unless maybe one is colorblind. Never thought of that before.

Blessings to our veterans. And to the refugees from that conflict who settled here.
