Good 37º dark cloudy morning.

 

 

Morning yesterday was sooooooooo foggy. We were promised sunshine by the weather guy and about 9:45 the sun was trying to get through the fog.......

 

In Grants Pass the fog had already disappeared..........

Ours hung around until a little after noon, still a few clouds....

.... but the sunshine was making Dude happy! We had heated to a sizzling 59º!

 

Yesterday I posted the story of NYC Subway Dogs... I got this reply from my pal Vivia, who lives in Brooklyn.... good story!

Hi. Re: dogs in bags--when I adopted Archie in 1998, I needed to take the subway to get home with him.  I knew nothing about the law banning them.  So I'm sitting on the subway with him and he is leashed when a Transit cop saunters by and says its illegal to have him here without being in a container.  I said I didn't know this and was just taking him home from the adoption place.  He was a nice guy and said, ok, but remember in the future.  Sigh.  Gotta love those cops!

A one pot pasta that strikes that balance between creamy and light. Fresh ricotta is the base for a silky and comforting cheese sauce and zucchini brings out texture, color, and flavor that compliments the pasta.

 

 

 

1 T. olive oil

1½ cups 1/4" sliced zucchini

1 clove garlic, finely chopped

2 cups uncooked farfalle pasta (6oz)

1¾ cups chicken broth

½ cup whole milk ricotta

2 T. grated Parmesan cheese

¼ t. salt

¼ t. pepper

2 t. lemon juice

2 T. chopped fresh basil leaves, plus more for garnish

 

 

In 10" skillet heat oil over medium-high heat. Add zucchini and cook 3-4 minutes, stirring frequently, until zucchini begins to brown. Add garlic, cook and stir 30 seconds, Remove from skillet.

 

Add pasta and broth to same skillet, heat to boiling. Reduce heat to medium low, cover and simmer 11-13 minutes, stirring occasionally, until pasta is al dente. There will be a little liquid left in the skillet.

 

Stir in ricotta cheese, Parmesan cheese, salt, pepper, and sauteéd zucchini. Cook 2-3 minutes until heated through. Remove from heat and stir in lemon juice and basil. Transfer to serving bowl. Garnish with more chopped basil if desired. Serve with more Parmesan cheese on the side.

 

Penne can be substituted for the farfalle.

This makes a good main dish or can be served alongside any roast.

You could also add some cooked shrimp to the dish.

National Milk Day on January 11 commemorates the day that many think the first milk deliveries in glass bottles began in the United States.  Alexander Campbell of the New York Dairy Company professed to the New York State Senate that his company was the first to make these deliveries in 1878. 

Here is some milk trivia that you can share with your family and friends:

—  The United States and Australia are the world’s largest exporters of milk and milk products.

—  Throughout the world, there are more than 6 billion consumers of milk and milk products.

—  In the Middle Ages, milk was called the virtuous white liquor because alcoholic beverages were more reliable than water.

—  1863 – French chemist and biologist Louis Pasteur invented pasteurization, a method of killing harmful bacteria in beverages and food products.

—  1884 – American Doctor Hervey Thatcher of New York City, developed the first modern glass milk bottle, called ‘Thatcher’s Common Sense Milk Jar,’ which was sealed with a waxed paper disk. Later, in 1932, plastic-coated paper milk cartons were introduced commercially as a consequence of their invention by Victor W. Farris.

—  The females of all mammal species can by definition produce milk, but cow milk dominates commercial production. In 2011, FAO estimates  85% of all milk worldwide was produced from cows.   

—  Aside from cattle, many kinds of livestock provide milk used by humans for dairy products. These animals include buffalo, goat, sheep, camel, donkey, horse, reindeer and yak.

—  Milk is processed into a variety of dairy products such as cream, butter, yogurt, kefir, ice cream and cheese.

—   Modern industrial processes use milk to produce casein, whey protein, lactose, condensed milk, powdered milk and many other food-additive and industrial products.

—  World Milk Day is celebrated on June 1.

HISTORY

In 1915, The International Association of Milk Inspectors submitted a request to Congress in October of 1915 for a resolution naming an observance of National Milk Day. A date was not suggested in their request. We have no record that the incoming Congress ever presented a resolution for National Milk Day, nor did incoming President Woodrow Wilson ever declare the day.
Within our research, we were unable to find the creator of the National Milk Day we observe today.
