Good 23º again frozen morning. 

 

 

While we had 23º and clear skies here yesterday....

 

 

Grants Pass was fogged in!

 

Our temps rose from that 23º BURRRRRR, to 30º by 9am, 40º by 10am, 60º by noon. We topped at 70º.

 

 

Yesterday an errand day. Grocery store, etc. Had some chats with other customers at the market. Most complaining about the cold!!! Then I said hello to a red lab in the car parked next to me. So sweet. His owner said his name was Rebel.

Mr. Food's Potato Cheese Soup....

 

 

Rich-as-can-be Potato Cheese Soup is a classic restaurant favorite that we can easily simmer on our stovetop. With a stick-to-your-ribs thick and hearty potato soup like this, it's easy to ladle up a satisfying meal chock-full of comfort.

• 2 tablespoons butter
• 1 celery stalk, finely diced
• 1 small onion, finely diced
• 1 3/4 cups chicken broth
• 3 large baking potatoes, peeled and diced
• 2 teaspoons white vinegar
• 3 tablespoons all-purpose flour
• 2 1/2 cups milk
• 1/4 teaspoon salt, plus additional to taste
• 1 teaspoon black pepper
• 2 cups (8 ounces) shredded Cheddar cheese

1. In a soup pot, melt butter over medium-high heat. Add celery and onion, and saute 5 to 7 minutes, or until tender.
    
2. Add chicken broth, potatoes, and vinegar; cover and bring to a boil. Reduce heat to low and simmer 20 to 25 minutes, or until potatoes are tender.
    
3. Add flour, milk, salt, and pepper; cook until soup is thickened and heated through, stirring constantly. Add cheese and stir until melted. Taste for salt, adding more if necessary. Serve immediately.

Notes

• Because salt levels vary depending on the type of chicken broth you use, you may want to taste for salt when you've finished cooking the soup.
   
• To serve this hearty soup restaurant-style, top with bacon bits, sliced scallions, and additional shredded cheese.

On November 9, National Louisiana Day recognizes the state that brought us such treasures as Jazz, Creole and American Mardi Gras.

When French explorers first arrived, several diverse tribes populated the area. Many of their population were decimated by disease and war. Natchez, Choctaw or Chitimacha descendants still survive today.

In 1803, Louisiana became territory when the United States completed negotiations with France for the 828,000 mile Louisiana Purchase. The first of 15 states to be carved out of the region, Louisianna entered the United States in 1812.

Within its mysterious gulf, Louisiana holds the secrets of pirates, conflicts of slavery and the paths of progress.  The bayou teems with life and stories untold.

Louisiana epitomizes the phrase “melting pot” probably more than any other state. Throughout the history of the state, Native American, French, Spanish, German, African, Irish and Caribean cultures have blended in a variety of ways creating a diverse and distinct culture in the bayou.
