Yesterday was my annual eye doc appointment. Dr. Jeffrey Pelson is super and so nice.
His office is in the Eye Care Group in Grants Pass. If you need an eye doctor, I highly recommend Dr. Pelson!
His assistant, Mandy, was fun. We had a good chat and agreed on everything! When she first said her name, my first thought was Barry Manilow and the song Mandy...
I got a call yesterday. The number said "California 1-530-414-4430". I don't answer calls from numbers or names I don't know. I get lots and lots of those kind of calls. Anyway, this one left a message. Wasn't a real person message, it was a recorded message. The voice said something I had will expire in 24 hours (didn't say what) and I will be taken into custody by the local cops as there are 4 serious allegations against me. I should call this number back and discuss the allegations. Good grief! Do people REALLY believe these kinds of phone calls??????

Mt Rushmore in Chongquing, China
The monument is located in one of the parks of Chongqing that was the capital of China from 1937 till 1945. It was built in honor of American soldiers who helped China in the war against Japan.
Hash Brown Crusted Quiche....
- 3 cups Simply Potatoes shredded hash browns (found in the refrigerator section at the market)
- 4 tablespoons (1/4 cup) unsalted butter, melted
- salt and pepper
- 1 cup (about 8 ounces) seasoned Italian ground pork sausage
- 6 large eggs
- 1/4 cup heavy whipping cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey jack cheese
- 2 scallions , finely chopped

Preheat oven to 375º. Coat a 9-inch pie plate with non-stick cooking spray.

In a large bowl gently toss the hash browns with the butter to coat. Season with salt and pepper. Press the hash browns into the bottom and up the sides of the plate to form a crust. Bake for approximately 25-30 minutes or until golden brown.

In the meantime, sauté the ground sausage in a skillet over medium-high heat, breaking it up with a wooden spoon, until no pink remains, about 5 minutes. Set aside to cool.

In the large bowl you used for the hash browns, whisk together the eggs, cream, cheeses, and scallions. Season with a dash of salt and pepper. Add in the cooked sausage crumbles. Mix to combine.

Pour mixture on top of the hash brown crust. Bake for approximately 30 minutes or until set. Let cool slightly, cut into wedges and serve.

Later dinner was a couple Schwans shrimp spring rolls with their super dipping sauce, some plain yogurt with one of Jeannie's tomatoes from her garden, and wine. Dessert was a slice of pumpkin roll (from Safeway).... YUMMMMMM!
Safeway has several flavors of the cake rolls... I love the pumpkin and the carrot, also they have chocolate. They are addictive!

How funny! I just posted a photo on my FB page of Isabella dressed as a pirate at school one year ago today. It was Pirate Day there. lol
How weird that it was just in the 90's there and now you are getting ice on your roof. Sort of what's happening here except there is water everywhere in the mornings from heavy dew. It's cold in the mornings too.
I have gotten that stupid call too. The latest ones says our "contract" is ending and if we don't pay them thousands they will withdraw the funds from our bank account! I feel so sorry for many old folks who just may fall for this crap! :(

I saw her picture, T. So cute!! Our temps are generally different, and I'm at 1200 feet also, hidden here between the mountains. I hate those crank calls! Good thing my message says, "Hello. We are avoiding someone we don't like, so leave your name and number and if we don't call you back.... it's you!"
LOL- That is a funny recording. That hash brown crusted quiche sounds good. I'm starting to actually cook again. Not much. But it's a start... enough for me to actually buy groceries.
