Good 65º clear sunny morning.
Yesterday the clouds moved in and it looked like rain on the way, but they spread out and no rain. It did keep it a tad cooler with the clouds blocking the sun.
The heat yesterday was at 73º at 9am. By noon it was 90º. And by 4:30 it was 103º.

Breakfast Casserole for 12
24 oz frozen shredded potatoes
salt and pepper
12 eggs
2 C half and half
1 t season salt
1½ C cheddar cheese, grated
1½ C pepper jack cheese, grated
2 C chopped ham (Or your preferred meat, sausage would also be great)
Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
Bake covered in foil at 350º for 90 minutes. Let rest for 10 minutes before serving.
Today was my sister Marion's birthday. She was born in 1934 and passed away in 2004. She is so very missed! Love you Mana!!!
