Golden Gate Bridge San Francisco
Amazingly, it took only 4 years to complete construction on this bridge. Since it opened it has become one of the most photographed bridges anywhere in the world.
Before it opened to the public in May 1937, the Golden Gate Bridge had been a dream that went back decades for many a Californian looking for a way to link San Francisco with Marin County on the other side of the Golden Gate Strait. But the strait's strong winds and deep water, combined with its frequent thick fog, made such a bridge seem impossible.
During the bridge's four-year-long construction, engineers came up with a number of innovative contributions, but perhaps none was more welcome than the safety netting designed by Joseph Strauss. Suspended beneath the bridge from end to end, the netting saved the lives of 19 workmen who would otherwise have certainly fallen to their deaths, earning them membership in the Golden Gate's "Halfway to Hell Club."
*** Ok, yesterday when I posted about the Brooklyn Bridge and my picture from the cab of the bridge....I was wrong. Thanks to Dan. I got the two mixed up and my photo was of the Manhattan Bridge! Here is a photo of the two bridges... the Brooklyn on the right and the Manhattan on the left!
This Cucumber Tomato Avocado Salad was shared on FB by my pal Karen aka "Sugar Bear" Baertschiger. She made it yesterday for a dinner party.
1 pound Roma tomatoes
1 English cucumber
1/2 medium red onion, thinly sliced
2 avocados, diced
2 T extra virgin olive oil
2 t. fresh lemon juice
1/4 cup or 1/2 bunch of cilantro, chopped
1 t. sea salt or 3/4 t. table salt
1/8 t. black pepper
Place chopped tomatoes, cucumber, red onion, avocado, and cilantro in large bowl.
Drizzle with the olive oil and lemon juice. Toss gently to combine. Just before serving toss with the salt and pepper.
*if you don't like cilantro, use fresh dill.
My friend Cathy had this bird make a nest in one of her cactus potted plants and lay eggs.... and then they hatched!

Later for dinner I decided to fry some bacon, some asparagus in the bacon grease, cut up tomatoes, and put it all with some angel hair pasta and Alfredo sauce. The bacon was fried and then drained on paper towels, a pat of butter was added to the bacon grease and the asparagus fried for a bit then I added in the tomatoes. I cooked the pasta (if you put a wooden spoon across the top of the pot it will not boil over). In a big bowl I mixed the pasta with the bacon, scooped in the asparagus and tomatoes using a slotted spoon. The bacon grease was taken out of the pan and the pasta mixture went back into the pan and the Alfredo sauce and a cup of pasta cooking water were mixed in and kept on low til ready to eat.

Moooove over whiners! June 4 is National Cheese Day! Well, it does go great with WINE!
An encyclopedia of cheese will cover the alphabet and broaden your vocabulary. It will undoubtedly contain more varieties of cheese than what’s found at the local grocer. Cheese is produced from the pressed curds of milk. The milk can come from cows, buffalo, goats or sheep. Temperature and aging affect the flavor and texture of the cheese as well as spices and other seasonings added during the process.
The opportunity to go to a cheese tasting or visit a cheesemonger who is knowledgeable about pairings will improve your enjoyment of the cheese you choose. Does Stilton melt? Can you serve Chévre with a salad? Be sure ask questions and provide your preferences. Your favorite wine might find a new sidekick. You might discover a smokey spread to go with bruschetta or a tangy cheddar to pack with lunch.
In the United States, a road trip to Wisconsin isn’t out of the question for quality and variety. But, they aren’t the only place to find outstanding flavor and choice. Local delis have selections of domestic and imported cheeses, and independent shops offer a rotating inventory beckoning us to keep visiting to see what’s new.
Excellent as a snack on its own, cheese is also a perfect ingredient in pasta, soups, souffle and many other recipes. We slap it on a sandwich cold but why stop there when it can be grilled and melted like this amazing Swiss and Tomato Grilled Cheese recipe. When company comes to visit, nothing is better than a cheeseball, especially when bacon is added.
Cheese is multinational, too! Every nation in the world has their own variety of cheese. Italy seems to have harnessed the market. They did add it to pizza, and that’s pretty amazing. Savor the opportunity if you ever have the chance to taste cheeses from around the world. For example, hop on over to Greece. They have this dessert called cheesecake. Delicious!

There are many ways to celebrate National Cheese Day. Try a new recipe or take a risk and try type of cheese you’ve never heard of before. Ask for recommendations from friends or share your favorites.
