Good 40º cloudy drizzling morning. Today and tonight predictions are for 30% chance of rain, although it is raining right now!
Several of the classes from my high school, Woodrow Wilson in El Sereno, are having a reunion coming up soon and I just read the latest note from Linda (Junker) who is organizing this and listed are all the classmates who have passed away. It made me cry. The classes attending are 1960, 1961, 1962, and 1963. Just so hard to believe it's been that many years!!
Yesterday with the sun out, some of the deer, turkeys, and a goose were enjoying it...
me too! That sunshine made me smile and happy! The clouds did roll and the sun came and went. We topped at 60º. Dude was out loving the sunshine too...
Here is an old favorite recipe of mine...
Tamale Muffins
Foil baking cups or non-stick muffin pan sprayed with cooking spray.
2 pkgs (8½ oz each) corn bread muffin mix
1 can cream style corn (14½ oz)
2 large eggs, lightly beaten
1½ cups Mexican cheese blend, divided
1½ cups chopped cooked chicken (use a rotissarie chicken, easy!)
¾ cup red or green enchilada sauce
Heat oven to 400º. In large bowl combine muffin mix, corn, and eggs. Stir until just moistened. stir in 1 cup of cheese. In another bowl toss the chicken with enchilada sauce.
Fill each of 24 foil lined muffin cups or muffin tin with 2 T of the batter. Place 1 T of the chicken mixture in the center of each and cover with about 1 T of the batter.
Bake 13-15 minutes, or until golden brown. Sprinkle tops with remaining cheese, bake another 3 or so minutes until cheese is melted. Cool 5 minutes before removing from pan to wire racks. Serve warm. Refrigerate leftovers.

Thought it apropos last night...... I have a projection clock in the bedroom and it shows the time and the outside temperature. Since yesterday was 4-17 the temperature last night was 41.7 !

This day brings us back to our childhood memories and the many boxes of Animal Crackers we shared with our friends. Animal Crackers refer to a type of small cookie baked in the shape of circus or zoo animals, such as a lion, tiger, bear or elephant. The most common variety are light-colored and slightly sweet. However, chocolate and frosted varieties are also available. Even though animal crackers are made with layered dough much like crackers, they are sweet like cookies.
HOW TO OBSERVE
National Animal Crackers Day is the perfect day to celebrate that childhood memory again. Pick up some animal crackers at your local grocery store and share them with family and friends.
HISTORY
Our research was unable to find the creator of National Animal Crackers Day. It did locate information confirming in the late 1800s animal shaped cookies were imported to the U.S. from England. In 1902 animal crackers officially became known as “Barnum’s Animals” and evoked the familiar circus theme of the Barnum and Bailey Circus. Later that year, the now-familiar box with a string was designed for the Christmas season made to hang from the Christmas tree. They were a big hit in 1902 and still are today.
