Rain ~ Dash ~ Corned Beef Quiche ~ Trip Advisor Reviews ~ Chips & Dips

 















Good 36º raining morning.

Yesterday the rain continued until about 1pm. It stayed cold. We warmed to 46º. 


I had to go out to do some errands, of course the rain was still drizzling and it stopped when I got home! Figures.


The "weather people" said severe storm warning for our area from 11pm last night to 11am today. Snow predicted for mountains and even on the valley floor. No snow here! Some at the very tip top of my mountain.


Brian brought Dash to work.... and poor baby was soooooo sleepy!



This recipe I posted a couple years ago. GREAT for leftover corned beef!


Corned Beef Quiche

1 (15½ oz) can corned beef hash or 1½ cups finely chopped left over corn beef
1/4 cup finely chopped onion
9 inch unbaked pie shell
2 eggs
1 container (4 oz) whipped cream cheese with chives
1 cup cottage cheese
1/4 tsp pepper

1. Preheat oven to 350 F
2. Combine corn beef & onion, use to line bottom of pie shell
3. In medium bowl, beat eggs until frothy. Add remaining ingredients, blend well and top the corned beef mixture.
4. Bake 50 minutes. Serve warm. Makes 6 to 8 servings.

I would also add with the corned beef, about 1 cup of cooked chopped cabbage.

Later it was reruns for dinner, then chair, wine, and TV.
