Crock Pot Bacon Cheddar Potatoes ~ Michael Duran ~ National Weatherman's Day


Good 47º foggy morning. 

Yeah, we got sun yesterday...



Well, how about an EASY super awesomely GOOD side dish for that next dinner or something to take to a pot luck....



12 oz pkg bacon, cut up and cooked crisp
6 russet potatoes, peeled and thinly sliced (or cut into bite sized pieces
1 vidalia onion, thinly sliced
3 cups shredded Cheddar cheese
optional: 1 envelope ranch dressing mix
garnish: chopped green onion or fresh chives (or if you don't like them raw, put them in when cooking.

1. Spread half the bacon in the bottom of the crock pot
2. Top with half the sliced onion
3. Top with half the sliced or chopped potatoes
4. Repeat layers
5. Cover and cook on low 4-6 hours
6. Half hour before serving, add in the ranch dressing mix if you desire, stir the mixture and add the cheddar cheese, stirring that in gently
7. Cover and heat another 1/2 hour
8. Top with garnish.

Dinner last night, since it was stuffed mushroom day, I had stuffed mushrooms along with an Omaha Steaks breaded veal cutlet and some veggies!

National Weatherman's Day

Date When Celebrated : Always February 5

National Weatherman's Day honors weathermen, and woman who work hard to accurately predict the often fickle weather. Despite major technological advances and supercomputers, forecasting the weather is still a tricky, and ever changing business.
Knowing the weather is important in so many ways. It affect how we dress, where we go, and even if we go. Space launches are made or delayed depending upon the weather. And, knowing the weather can save lives. The most obvious example is knowing when and where hurricanes or tornados may hit.
According to the Air Force News, Weatherman's Day "commemorates the birth of John Jeffries, one of America's first weathermen". Jeffries was born on Feb 5, 1744. He kept weather records from 1774 to 1816.
If you see a weatherman today, give them your appreciation for a job well done.


My favorite "weather people" are on KOBI TV Channel 5 here in So Oregon/Northern Cal.....
