Good 32º, very foggy morning.
Yesterday morning the clouds moved aside a bit and there was snow on the
tip top of my mountain!!! It was gone by afternoon.
Then the sun came through. AHHHHHH..... I went out and did a stand in the
sun thank God for it, stance...
It felt soooooooo good on my face!
So, with Taco Tuesday just around the corner (tomorrow!), here
is a super easy bake just for that!
Beefy Taco Bake
1# ground beef
1 10oz can condensed tomato soup
1 cup salsa
1/2 cup milk
6 6:-8" flour or corn tortillas cut into 1"
pieces
1 cup shredded Cheddar cheese, divided
Preheat oven to 400º
Coat a 2qt baking dish with cooking spray.
In large skillet brown the beef over med-high heat, stirring
until crumbles. Drain and stir in soup, salsa, milk, tortillas, and 1/2 cup
cheese. Spoon into baking dish.
Cover and bake 30 minutes, sprinkle with remaining cheese and
serve.

Later an exciting day: dishes, laundry, trash to road, bill

Dinner was brown rice cooked in the rice cooker. A
Schwans marinated salmon fillet cooked in the Air Fryer, and a little salad with 7 Oaks Sweet Onion Ranch Dressing .

Watched my Patriots play da Bills and beat them 23-3!!!
Then after dinner it was chair, wine, and more TV...

National Cookie Day
It’s National Cookie Day! Did you know that the English word "cookie" is
derived from the Dutch word "koekje," which means little cake? Dutch bakers used
