Good 30º foggy morning.
Boy the freezing fog was in all morning
yesterday.... we were at 31º...
As the sun came through and we warmed to 38º you
could see the snow still on top of my mountain..
Then by afternoon we had a heat wave and warmed
to 52º.
Everything about this salad sounds heavenly! The
dressing has mayonnaise with maple syrup! OMGOSH!
Drooling...............
- 1 (8-ounce) package elbow macaroni
- 1 cup chopped cooked rotisserie chicken
- 1 cup chopped apples
- 1 cup chopped pears
- 1/2 cup dried cranberries
- 1/2 cup chopped celery
- 1/2 cup chopped candied walnuts
- 1 cup mayonnaise
- 3 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- In a medium pot of boiling salted water, cook
pasta to desired doneness; drain well and cool. (Rinse with cold water to cool
quickly; drain well.)
- In a large bowl, combine cooled pasta, the
chicken, apples, pears, cranberries, celery, and candied walnuts; mix well.
- In a small bowl, combine mayonnaise, maple syrup,
vinegar, and salt; blend well. Pour mayonnaise mixture over pasta mixture; toss
lightly then serve immediately.
Notes
If you're not serving this salad immediately, you may want
to wait to add the pears and walnuts just before serving, so they stay nice 'n'
crunchy. You can also add an additional 1/4 cup mayonnaise to moisten the salad
just before serving.

National Date Nut Bread Day
Date When Celebrated : September 8 or December

National Date Nut Bread Day is today. Enjoy a tasty bread for the
holidays. It's the perfect bread for the season. It contains nuts and sugar, but
is not heavy on the sugar. Date nut bread is quite popular. You can make it
yourself, or buy some at the bakery. We suggest a couple of loafs. In our house,
a single loaf does not last long.
There is some question as to the correct date for
this special day. A survey of the net, resulted in roughly half of the
references for this day claiming it is on September 8th. In our survey, a very
slight majority record this special day on December 8. We go with the majority
for two reasons: First, it is the majority. Second, this day fits well in the
holiday season. Date Nut Bread is popular for the holidays.
Get your fill of Date Nut Bread today. After all,
that's what this day is for.

1 cup chopped dates
1 cup boiling water
3 T. butter
1/2 cup light brown sugar, packed
1 egg
1/4 cup molasses
2 cups flour
1 t. baking soda
1/8 t. ground cloves
1/4 t. salt
1 cup chopped walnuts
1. Preheat oven to 350º
2. Spray loaf pan with cooking spray
3. Soak the dates in the boiling water for 15
min, set aside
4. In mixing bowl, cream butter and brown sugar.
Add egg, molasses, and date mixture. Blend on low speed. Add remaining
ingredients and mix on low speed until combined.
5. Pour the batter into loaf pan and bake 55-60
minutes... until toothpick inserted in center comes out clean.
** Breads like this freeze well. Just be sure to
wrap them well and place in a freezer bag with as much of the air removed as
possible.
