Good 37º raining dark cloudy morning. Happy Standard Time!!!
Hope you set your clocks back. The time change hasn't really
affected us yet. Once it has started getting light Bruiser is up, bathing
himself, and waiting for me to get out of bed!
Then he went outside and came back in and next he was bathing himself again! This time sitting on top of my computer!!
No snow on the summit or in Ashland yet, but predictions for it today. Yesterday afternoon we still had the gloom....
Yesterday I cleaned out some old clothes and now need to find out where I can take them. Also, heard silly rustling sounds in the attic. Critter up there so I called pest control out to put in a bait box and they will be here the middle of the week. Until then I have to continue to hear that critter wandering in the attic!
Ok, here you go.... easy, yummy, homemade pizza.
Spinach Artichoke Pizza.....
Get a can of pizza dough...
Ingredients:
- 1 pizza dough
- 2 tablespoons olive oil
- 2 cloves garlic, grated
- 2 ounces cream cheese, room temperature
- 5 ounces cooked fresh or thawed frozen spinach (squeezed of excess liquid), and coarsely chopped
- 1 cup mozzarella, shredded
- 1/2 cup parmigiano reggiano (parmesan), grated
- 1 (14 ounce) can of artichoke hearts, drained and quartered
Directions:
Shape the pizza dough into the
desired form and place on an oiled baking sheet.
Brush the entire pizza with the
combination of the garlic and the olive oil, sprinkle on small chunks of cream
cheese followed by the spinach, mozzarella, parmesan and artichokes making sure
to get some of the parmesan onto the crust edges as well.
Bake in a preheated 500º oven until
the cheese has melted and the crust is crispy and golden brown, about 10-15
minutes.
Tip: sprinkle some cornmeal onto the oiled baking
sheet to help prevent sticking.
Options: Add 1 cup cooked shredded chicken, or
sliced sun dried tomatoes, or chopped bacon.
