Good 30º everything out there is frozen morning!
No snow on my mountain yet.... and the sun did come out
yesterday afternoon...
Dude was barking in the house so I went out and there was Mr. Coyote.... he
disappeared fast when he heard me say "hello".... sure is good cammo this time
of year!
Do you like mushrooms? I LOVE mushrooms. These are
particularly good!
Balsamic Roasted Mushrooms
ingredients
- 2 pounds mushrooms
- 1 tablespoon oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons soy sauce (or tamari)
- 3 cloves garlic, chopped
- 1/2 teaspoon thyme, chopped
- salt and pepper to taste
directions
- Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt and pepper, arrange in a single layer on a baking pan and roast in a preheated 400º oven until the mushrooms are tender, about 20 minutes, mixing half way through.

Later it was another Schwans chicken egg roll with a dipping sauce of mayo and some sweet hot chili sauce and I heated up the cut up yam in some butter. SO GOOD!! Then TV..... NYPD Blue, Blue Bloods, and a Hallmark Christmas movie.

National Bittersweet Chocolate With Almonds Day
National Almond Day is February 16th, National Chocolate Day
is October 28th, National Milk Chocolate Day is July 28th, and National White
Chocolate Day is September 22nd.
You could also make a Chocolate Almond Delight...
1/2 oz Amaretto almond liqueur
1/2 oz chocolate vodka
1/2 oz Baileys or other Irish cream liqueur
1/2 oz white cream de cacao
1/2 oz Godiva or other chocolate liqueur
2 oz half and half or cream
ice
Combine all ingredients in a cocktail shaker with ice. Shake
and strain into martini glass.
Option: almond or chocolate cookies... finely crush them and
plate on a plate, moisten rim of glasses, and press rim into cookies to
coat.
Of course... you'd have to have a full bar of items to make
this!!
