Rain! ~ Mexican Word of the Day ~ Chicken Vegetable Rice Casserole ~ TV


Good 44º raining morning.

Oh look.... here comes the rain over my mountain yesterday about 1pm...

The rain and gusty winds started in the afternoon. At points it POURED~! As of this morning we have gotten 1". Yeah!!! 






If you love rice, chicken, vegetables, black beans, and salsa... you will love this casserole....
Chicken Vegetables Rice Casserole

3½ cups hot cooked yellow rice
1 T.  vegetable oil
½ cup chopped onion
½ green bell pepper, chopped
½ red bell pepper, chopped
2 garlic cloves, minced
1 15oz can black beans, undrained
1 T white vinegar
½ t. salt
¼ t. black pepper
4 cups cooked rotisserie chicken, chopped
1½ cups Colby-Jack cheese, shredded
1 cup salsa (red or green)
cilantro or parsley chopped, about 1/4 cup


1. Preheat oven to 350º
2. Coat 3 qt baking dish with cooking spray
3. Put rice in baking dish
4. In medium saucepan over med heat, heat oil, add onion, bell pepper, garlic and cook 5 minutes until softened.
5. Stir in black beans, vinegar, salt and pepper. Cook 5 minutes until heated through.
6. Pour mixture over rice, top evenly with chicken and cheese.
7. Bake 12-15 minutes.
8. Spoon salsa over cheese and sprinkle with cilantro or parsley.
Top with dollop of sour cream when serving.

National Brandied Fruit Day celebrates sweet tasting fruit, soaked and marinated in brandy. This is a day that you have most certainly booked on your calendar, in eager anticipation. Well, it has finally arrived.
Brandied fruit...now that's cause for a celebration! As a matter of fact, I'll drink to that.
