The State of Oregon abides by the so-called “Castle Doctrine.”
Oregon law states a person is justified in using
“deadly physical force upon another person” if the person is “committing or
attempting to commit a burglary in a dwelling,” regardless of threat of
harm.
In June 2016, an Oregon woman shot and killed a stranger found in her
daughter’s bedroom. Four days before that shooting, a Portland homeowner shot
and wounded ex-NFL player Stanley Wilson II after he was found naked trying to
break into his home. Grand juries cleared both of those shooters of any
wrongdoing.
In non-Castle Doctrine states, homeowners aren’t as protected. According to Jack Levin, a criminology professor emeritus at Northeastern University, you would have to wait until your life is threatened or property is taken before you can open fire.
But in Oregon, the only justification needed is to prove a home invasion occurred, and the person shot was the suspected perpetrator.

A tad different take on Mashed Potatoes..... a Mashed Potato Casserole. This will go great with that Thanksgiving turkey!
5 pounds potatoes, peeled and cut into chunks
1 8oz pkg cream cheese, softened
2 T. minced onion
2 eggs
2 T. all purpose flour
2 T. chopped fresh parsley
1¼ t. salt
1 t. black pepper
1 2.8oz can French-fried onions, coarsely chopped
1. Preheat oven to 325º
2. Coat a 2qt casserole dish with cooking spray
3. Place potatoes in soup pot and add enough water to cover and bring to
boil over high heat. Reduce heat to med and cook 12-15 minutes, until fork
tender. Drain.
4. In with electric mixer, beat potatoes and cream cheese until smooth. Add
onion, eggs, flour, parsley, salt and pepper and beat until well blended.
5. Spoon potato mixture into casserole dish. Sprinkle with French-fried
onions and bake 35-40 minutes, until edges are golden and heated through.

National Chocolate Cupcake Day
It’s National Chocolate Cupcake Day! Chocolate cupcakes are a delightful
treat served at gourmet bakeries and kitchen tables across the
country.
Cupcakes first emerged during the 19th century in the United States.
There are two theories about how they got their name. One claims that the
miniature cakes were originally baked in cups. The other suggests that the name
comes from the recipe, which was measured out by the cup—one cup butter, two
cups sugar, three cups flour, four eggs, one cup milk, one spoonful baking
soda.
Cupcakes are now made with a variety of flavors, ingredients, and
decorations, but simple chocolate cupcakes remain a perennial favorite. Bake,
frost, and decorate a batch today to celebrate National Chocolate Cupcake
Day!
