~ Clear Skies ~ Remembering 9-11 ~ Cat Love ~ Oven Baked Egg Rolls ~


Good 54º hazy morning.

Wow, I just couldn't believe the clean air and the sun yesterday!!!

About noon the "haze" started filtering back in a little. Not bad this morning. Can still see my mountain!!!!

Yesterday we topped at 93º.


Breakfast was two eggs microwaved and set atop some loaded mashed potatoes with some melon and carrot roll to go with the coffee.



Today is a hard day when remembering the devastation and lives lost on this day in 2001...

I was emailing with John Thurman (LASD ret) and he wrote me back he was waiting to hear from his son who was stationed at the Pentagon. Later he wrote that the plane hit the Pentagon on the floor under his son's office. His son was OK, smoke inhalation, but ok. A couple of men in his office and a lot of them on the other side of the wall died.

Ok, go get some egg roll wrappers.............. this is GOOD!      

Oven Baked Egg Rolls

Ingredients:
1/4 cup (reduced sodium) soy sauce
2 T. light brown sugar
1 t. ginger
1 t. garlic powder
5 cups coleslaw mix (at your local market)
2 green onions, thinly sliced
3 T. chopped cilantro
1 cup salad shrimp, chopped
10 egg roll wrappers
1 egg, slightly beaten
cooking spray

1. Preheat oven to 425º. Coat baking sheet with cooking spray.
2. Combine soy sauce, brown sugar, ginger, and garlic powder. Mix well.
3. In another bowl combine coleslaw, green onions, cilantro, and shrimp. Mix well.
4. Pour soy sauce mixture over coleslaw mixture, toss to coat evenly. Let stand 15 minutes.
5. Place coleslaw in colander, and squeeze to drain well.
6. Spoon about 1/3 cup of the slaw mix evenly into the center of each egg roll wrapper. Brush edges of wrapper with beaten egg. Fold one corner of each wrapper up over coleslaw mixture, then bold both sides over in envelope fashion. Roll up tightly.
7. Place seam side down on baking sheet, lightly coat with cooking spray.
8. Bake 8-10 minutes, or until lightly browned. Turn over and bake 4-5 additional minutes, until golden brown.
Enjoy!!! Some saké would be good with these!

Later it was chair, wine, TV.....

Friends of mine living in Florida are all OK so far. What a relief. 
Our fires up here are still going, with "some" containment, but resources are being stretched thin.
