Good 65º scattered cloudy morning.
Yesterday it stayed very smokey again. Warmed to 103º. Then by
early evening we had a thunderstorm pass over. No rain. No lightening. Just lots
of rumbling!
Earlier I was going to go out back and turn on the rainbird,
but momma turkey and her babies were out there by the water tubs..... and eating
the cracked corn I put out for the birds.... Hard to get good pictures sideways
through a window!
Try this easy, keeping the house cool, meatloaf:
Slow Cooker Meatloaf Parmesan
1. In large bowl mix together 1 cup of the pizza sauce with the meat, onion, garlic, peppers, Parmesan, eggs, and seasonings.
2 1/4 pounds lean ground beef
15oz pizza sauce, divided
2 T dried minced onion
2 t minced garlic (or use freeze dried)
1/2 cup fresh bell pepper, chopped
1½ t. Italian seasoning
3/4 cup shredded Parmesan
2 eggs
salt and pepper to taste
1½ cups shredded Mozzarella
1. In large bowl mix together 1 cup of the pizza sauce with the meat, onion, garlic, peppers, Parmesan, eggs, and seasonings.
2. Spray 6 or 7 quart slow cooker with cooking spray and pat
meat down into crock, making sure the center is pressed down more than the
edges.
3. Cover and cook on high 2 hours
4. With a spatula push the extra oil off the top of the
meatloaf to the sides.
5. Pour remaining pizza sauce on the top of the meatloaf and
top with cheese.
6. Cover and cook a few more minutes until cheese melts.
Use lean ground beef because the meat will shrink up and the
fat will pool around the outside of the loaf. If you use higher fat beef the
loaf will be a lot smaller and you will have a lot more excess oil around the
outside.

the norm!

Later watching the news they said Portland had a new Police
Chief. She came from Oakland Ca and was Assistant Chief there. Her name is what
is wayyyyy too funny, Danielle Outlaw! Good grief!
