Throw Back Thursday ~ Mini Scrambles/Caramel Apple Tartlet ~ Super Photos ~ Dave Smail ~ 1984 Photos ~ Quiche/Asian Stir Fry Veggies ~ Waffle Iron Cooking


Good 46º clear sunny morning.
Yesterday it was clear and sunny and we rose in temperature to 86º. Nice!!! Again, doors and windows open, and no AC.
Throw Back Thursday.... 2004 when we went from T-111 plywood siding to the vinyl siding...


And the insulation that was put on before the siding... which has made a HUGE difference in the house staying cool in summer and warmer in winter!

Dude's limping dissapated, so I didn't take him to the vet. He must have hit a rock with the pad of his foot while running Tuesday and it bruised. He''s good now, just barely limping.
Breakfast was Schwans Mini Scrambles on spinach with tomato and an Omaha Steaks Caramel Apple Tartlet. The scrambles and tartlet remain frozen until you are ready to eat them, then into the microwave they go. Taaaa daaaaaa.......

Yesterday I got busy cleaning out "stuff". Jars of home canned stuff in the cupboard for too long. Down the garbage disposal! Then found a basket of stuff in my bedroom that most went into the trash, and a few things will go to the Senior Center store.
Then I took apart a 1984 photo album.
I will divide up the photos and share them with those in them. Sent a few via email...

The day after Thanksgiving at Jerry's mom's in Pleasant Grove (north of Sacramento on Hwy 99) . Andy and Linda Nantz and their boys always came to visit (they lived close, in Woodland). Jerry's mom made the turkey dinner for T-Day and the next day I made turkey soup for everyone.

That was fun. More to organize today!
Later for dinner I cooked a Costco Quiche and steamed some Schwans Asian Stir Fry veggies in the microwave......


The vegetables (carrots, snap peas, broccoli, bell pepper, and crunchy water chestnuts. You put them in a microwave safe bowl, add in a drizzle of olive oil or water (I used both) and the Asian seasoning. I only used half of the seasoning. They put a lid on the bowl and cook for 6-8 minutes. They are really good and VERY spicy! Or, they can be cooked in a skillet.

Then it was chair, wine, TV... Animal Cops Phoenix, Family Feud, and skimmed though the news for just the local stuff. The national news is all BS!!!!

Waffle Iron Day**

Waffle Iron Day celebrates this great kitchen gadget that makes tasty waffles. Waffles are cooked between two metal plates. A waffle iron is powered by electricity to heat the plates and create, light waffles ready for you to top with syrup, and/or your favorite fruits.
Waffles are not just for breakfast. They are good for lunch or dinner, too.  
The origin of the waffle:  The waffle dates back to the 1300s in Greece. Greeks cooked flat cakes between two metal pans. At the time, they topped it with cheeses and herbs. Pancake syrup wasn't around back then.
You do know how to celebrate this day.......don't you!? If you don't have a waffle iron, today is a good day to go out and buy one. If you are too busy to make waffles ourself, buy some frozen in your grocery store, or order them out at a restaurant.
** Not only can you cook waffles in a waffle iron, but so many other things... I love cooking grilled cheese sandwiches in it

refrigerator biscuits (slit and add cheese),
and macaroni & cheese!

Or take a couple tortillas, spray one side of each with cooking spray, put whatever sounds good on them, and set in the waffle iron and press down slightly and cook...
Also, hash brown nuggets are super cooked in the waffle iron!
