Good 46º somewhat cloudy morning.

Yesterday the rain was heavy at times in the morning then
tapered off and got a bit breezy.... well, downright windy and only 65º!

And out munching on some grass was this momma deer..
And Dude loves laying in the sun....
This is something I saw and had to have. It's a decal and I
don't know if I will put it on my fridge or on the back of my car!
Wednesday I stopped in Rogue River and saw this wreck in front of the
credit union:
The woman, elderly and with a heavy British accent hit the gas instead of
the brake ... she, fortunately was not injured!
Today high school pal Jim Harper is celebrating his birthday.
HAPPY BIRTHDAY JIM~!!

and will be working for Washoe County Sheriff's Dept. One of my "sons" Jim
Forbus retired from there recently.

In the afternoon yesterday I took Dude in for his "mani/pedi".
I know he wasn't happy about that, but he does love to ride in the car! Doc gave
him an exam and said all was well. He's healthy and slim and looking fit.

Mexican Corn Salad Dip
Prep
Time: 5 minutes Cook Time: 20 minutes Total Time: 25 minutes Servings: 4
Mexican style street corn in dip form that is just
perfect for scooping with tortilla chips!
ingredients
- 2 tablespoons butter
- 3 cups corn (about 4 ears), cut from the cob
- 1/2 red bell pepper, seeded and finely diced
- 1/2 jalapeno, seeded and finely diced
- 3 tablespoons mayonnaise
- 3 tablespoons sour cream
- 1 clove garlic, grated
- 2 green onions, sliced
- 1 handful cilantro, chopped
- 1 lime, juice
- 1/4 cup cotija (or feta), crumbled
- chili powder to taste
directions
- Melt the butter in a heavy skillet over medium-high heat add the corn, toss and let it sit cooking until lightly charred, mix it up and let it char again, about 6-10 minutes, before adding the jalapeno and bell pepper, sauteing for a minute and removing from heat.
- Mix everything and serve warm or at room temperature.
