Rain ~ Mushrooms ~ Gary Sinise ~ Pesto Dip ~ Spanish Paella

Good 42º raining morning. Another 1/4".
I'm waiting.....

This is interesting about mushrooms, some things you might not have known...
Because mushrooms are white or tan in color, some assume that they don't pack the nutritional punch of more colorful produce, like tomatoes or broccoli. But, what mushrooms lack in color, they more than make up for in their health benefits. A serving of about 5 medium mushrooms has just 20 calories and contains niacin, selenium, riboflavin, vitamin D, iron, and calcium. They have been shown to help maintain a healthy immune system and may have anti cancer properties to fight the development and progression of cancer ... and are also said to help prevent heart disease by lowering cholesterol levels. Mushrooms also act as a great meat replacement in recipes for vegetarians because they have some of the same flavor characteristics of meat.

One of my favorite Hollywood people is Gary Sinise. He will be given the highest honor the Army bestows on civilians...

Now I love pesto, and this is a super easy quick dip...

1 cup mayonnaise
1 cup sour cream
1 container (7oz) pesto sauce
salt and pepper to taste
Mix it up, refrigerate until ready to eat, and serve with chips or veggies.

Yesterday was catch up day. So exciting. Let's see, clean out fridge, wash sheets and make bed, vacuum, dust. UGH!
