Good 40º I can actually see some sky morning! BUT it's getting REALLY windy!!! We're covered with radar and rain is expected.
The rain yesterday was on and off all day and we ended up with
3/4".
Today is a special birthday, Cyndi Moreno, wife of the
infamous Pete Moreno (LASD ret). HAPPY BIRTHDAY CYNDI!!!!
This back in 2008 when Cyndi and Pete's Deputies on the Go were on a cruise
.. NY, Boston, Nova Scotia, Bar Harbor, Peggy's Cove....

I LOVE vegetables, as you know if you read what I cook, and this Creamy
Parmesan Tomato Spinach Tortellini Soup is OUTSTANDING!
Ingredients:
2 T butter
1 onion diced
2 cloves garlic, chopped
red pepper flakes to taste (optional)
1/4 cup flour
3 cups vegetable broth or chicken broth
1 28oz can diced tomatoes
2 T. tomato paste
8 oz cheese tortellini
1/2 cup grated Parmesan cheese
10 oz fresh spinach coarsely chopped
1/2 cup heavy cream or plain Greek yogurt
salt and pepper to taste
1/4 cup fresh chopped basil (optional)
1. Melt butter in pan over medium heat, add onion and cook til
tender (5-7 minutes).
2. Add garlic and red pepper flakes and cook about 1
minute.
3. Add flour and cook another minute.
4. Add broth, tomatoes, tomato paste, tortellini. Bring to
boil, reduce heat and simmer about 10 minutes. (less time if you buy the fresh
refrigerated tortellini)
5. Add the Parmesan, let it melt. Add the spinach, let it
wilt, add the cream (yogurt), season with salt and pepper. Remove from heat
before adding the basil.
You can replace fresh basil with 2 T. basil pesto.
Add 2 cups cooked shredded chicken or 8 oz cooked Italian
sausage to make it even more hearty.

Cherry Pie Day
It's Cherry Pie Day. Cherry pie is America's second most popular pie,
behind only apple pie in popularity. However, in the month of February, it's
Number 1.
As a young boy, George Washington made the Cherry tree popular, with his
famous quote "I can not tell a lie, I chopped down the Cherry tree." We
celebrate George Washington's Birthday and President's Day in February.
Appropriately, its traditional to bake cherry pies in honor of the
occasion.
Being the "hot pie" of the moth, it is only fitting that Cherry Pie Day
falls in February. On Cherry Pie Day, celebrate today with a piece of pie.
