Gloom ~ Throw Back Thursday ~ Mary Tyler Moore ~ Creamy Chicken Enchiladas ~ Spouse's Day


Good 32º foggy morning. UGH
Yesterday the gloom continued. Oh for some sunshine!!!! Clouds should last all week, weekend, and then rain again next week. 

This is just plain old depressing!!!!! I need therapy.............

Throw Back Thursday......


The Parthenon in Greece when I was there in 2009. The man in the photo, didn't know it at the time, but he walked behind where I was sitting and his co-conspiriters, a man and woman, engaged me in conversation re the Boston Patriots (I was wearing a Patriots jacket) and while the woman told me she was from Boston this man reached into my backpack and took my wallet!!!
I didn't know it was missing until we stopped for lunch and I was reaching for my wallet but it was GONE! From our hotel we called the security at the Parthenon and they said they had found it in a trash can. Got it back, and only missing was about $300 in euros. Lesson learned!!!

Sad about Mary Tyler Moore dying yesterday at age 80. She was diagnosed with type 1 diabetes at age 33 and suffered from near blindness resulting from the disease in recent years.

She was proceeded in death by her only child, son Richard, who "accidentally" shot himself at age 24 in 1980. She had also suffered from alcohol addiction and in 1984 checked into the Betty Ford Clinic. She is survived by her husband of 33 years, Dr. Levine. RIP!

OK, Easy Creamy Chicken Enchiladas....

Ingredients:
1 rotisserie chicken
2 cans (14oz ea) diced tomatoes with mild green chilies, undrained
2 cans (10¾ oz) condensed cream of chicken soup, undiluted
1 can (10¾ oz) condensed cheddar cheese soup, undiluted 
¼ cup 2% milk
1 T. ground cumin
1 T. chili powder
2 t. garlic powder
2 t. dried oregano
1 pkg (8oz) cream cheese, cubed
20 flour tortillas (8"), warmed
4 cups shredded Mexican cheese blend
Directions:
1. Preheat oven to 350º. Remove meat from bones, discard bones. Shred chicken with two forks, set aside.
In large bowl, combine tomatoes, soups, and seasonings.
Transfer 3½ cups to another bowl, add chicken and cream cheese.
2. Spread ¼ cup soup mixture into each of two greased 13x9 baking dishes. Place 1/3 cup chicken mixture down the center of each tortilla. Roll up tortillas and place seam side down in baking dishes. Pour remaining soup mixture over tops, sprinkle with cheese. 
3. Bake uncovered 30-35 minutes or until heated through and cheese is melted.
Freeze option:
Cover and freeze unbaked casseroles up to 3 months. To use, partially thaw in refrigerator overnight. Remove from fridge 30 minutes before baking. Cover casserole with foil. Bake 45 minutes in 350º oven, or until heated through and a thermometer inserted in center reads 165º. Uncover, bake 5-10 minutes longer, or until cheese is melted. Yield: 2 casseroles, 5 servings each.

** and just think, 15 years later minus 2 days his wife lies when testifying before house and senate panels re Benghazi. Geeze, you wonder if those two even have a remote idea of what the "truth" is!!! I think not. Whatever paddles their boat is what they go with.

Later lunch was the rest of the lentil rice soup I got at the deli. It was WONDERFUL. Had a kick to it. Yummmm.... and I heated some pita pieces with butter. OMGOOOOD!!!  



My niece said her hard drive bellied up some time ago and she lost all her photos. The ones from our trip to Greece and Turkey were among them. I copied off all my pictures from the trip and will mail them to her on a DVD. I have about 300 photos!!!

Spouse's Day

This is a day to enjoy and appreciate your better half. You can use this day as a prelude or warm up to Valentine's Day, perhaps. But, its not as much of a gift giving event. Rather, use it as a time to show your spouse that you care and appreciate all of the things that he/she does for you and for the household. Over the long years of a relationship, its easy to take for granted the many things your spouse does. He/she's always there. They do so many big and little things as a routine event. So, take today to notice and to say thanks. As for the "enjoyment" part of the day...we will leave that up to you to enjoy your spouse however the two of your desire....



If you are lucky enough to have one...enjoy each other to the fullest! Mine is sooooooooooo missed. Difficult to deal with that loss. You'd think it would be easier after 10 years, not!
