Good 47º clear sunny morning.
Breakfast yesterday was the other 6 of the steak bites, egg with Parmesan cheese, and tomato.  

Yesterday Dude and I took the run to the road to put out the trash can. Had a few wispy clouds then, 
and it was a comfy 77º , but by noon it was 82º. We topped at 92º. Supposedly cooler this week.


Ok, for all you folks with gardens and zucchini (or yellow squash) here is a quick and tasty side dish...
 
Zucchini Onion Pie

Makes 6 servings. Prep time 30 minutes.
3 eggs
1 cup grated Parmesan cheese
1/2 cup vegetable or olive oil
1 T minced fresh parsely
1 garlic clove, minced
1/4 t salt
1/8 t pepper
3 cups sliced zucchini
1 cup biscuit baking mix
1 small onion, chopped
In a large bowl, whisk the first seven ingredients. stir in the zucchini, baking mix, and onion. Pour into greased 9" deep dish pie plate or a 9x9 baking dish. Bake 350º for 25-35 minutes, or until slightly browned.
Now here's some additional ideas for this pie:
Use cheddar instead of Parmesan
Use broccoli instead of zucchini
Add Italian seasonings
Use yellow squash instead of zucchini
Grate the zucchini instead of slicing
Add chopped cooked bacon

Dinner was an Omaha Steaks Chicken in Pastry and some artichoke bottoms.
The pastry was cooked in the Air Fryer with a drizzle of olive oil. I added a small spoonful of artichoke/spinach dip to each choke bottom and then a little Chipotle mayo.


   OMGOOOOOD!!!!

International Talk Like A Pirate Day

Ahoy, Matey! Did you know that today is International Talk Like a Pirate Day? It's a day just for fun, a day to let out the pirate in each of us. We like "just for fun" days and we know you do, too.
Practice up your "pirate-speak" in anticipation of this day. The conversation will be lively, and you don't want to be left behind. Today, everyone will be talking the talk, if not walking the walk. It is not a requirement to dress like a pirate today. Just talk like one. 
Origin of International Talk Like a Pirate Day:

John Baur and Mark Summers created the concept of International Talk Like a Pirate Day on June 6, 1995. While playing racquetball, they began to talk to each other in Pirate-speak". After leaving the court, they decided that there was a need to create this day. After much thought, Mark Summers selected September 19th as the date. This was his wife's birthday. So, he thought it would be an easy date to remember. And so, International Talk Like a Pirate Day was born.

I bought some of those Omaha chicken pastries and we loved them. Like little pot pies.

Did you get those steak bites from Omaha? I must have missed them if you did.

Love loved the Righteous Brothers. They, along with the Bee Gees were my all time favorite singing groups. I saw the Righteous Bros. in Las Vegas not long before Bobby passed away. I couldn't believe I was seeing them in person and cried all the way thru. :) Vickie Buhman and another gal friend were with me and Vickie was brave enough to take my camera up in front of the stage and get some photos. :)

I wonder what would go into a pastry to make it pirate?

Will have to see if I can round up some artichoke bottoms.

We won't be as hot today... not the same as being cool... but growing closer.
