Good 54º clear sunny morning. Yesterday up a notch to 96º.
I have to say, this is one of my all time favorite commercials. LOVE it!
Out back the turkeys were visiting... the mommas and babies....
Yesterday I met up with Karen (I call her Sugar Bear)
Baertschiger at Taprock for lunch. Her son is our Oregon State Senator.. https://www.oregonlegislature.gov/baertschiger
We had a great time!
BTW, my shirt:
She had a bloody and I had wine. Both of us had their Fresh Crab BLT
Chopped Salad. OMGOOOOOOD!!! It has fresh crab, bacon, tomatoes, avocado, and
romaine.
I, unfortunately started eating it before I took a picture! Only ate half,
so the rest was for dinner! We jibber jabbered away for over an hour. She's
fun!

Now here's an easy Enchilada recipe you can make in the summer. Simply cook it in your Crock Pot!
1 pound lean ground beef
10 6" corn tortillas, cut into quarters
1 (1 oz) taco seasoning mix
1¼ cups water
1 (12 oz) jar chunky salsa
1 (10 oz) can condensed cream of mushroom soup
1 (10 oz) can condensed cream of chicken soup
4 cups shredded Mexican cheese blend
1 sm can sliced black olives (drained)
1. Crumble and cook the ground beef in a fry pan until evenly browned. Add
taco seasoning and water and simmer 15 minutes over low heat.
2. In bowl stir together salsa and the soups and mix in 3 cups of the
cheese... saving the rest for later.
3. Place a layer of the tortillas covering the bottom of the slow cooker.
Scoop a layer of the ground beef mixture on top and then spoon a layer of the
cheese mixture on top of the beef. Repeat the layers until you run out of stuff,
ending with a layer of tortillas and top those with the remaining cheese and
sprinkle on the sliced olives.
4. Cover and cook on high for 45 minutes to an hour.
Serve with chopped tomatoes, lettuce, guacamole, and sour cream.
Later it was leftover Crab Salad, chair, wine, and TV.
All I know. Nuff said. Happy Hump Day. Ciao.

National Scotch
Day
Ok, are we celebrating my heritage? or the distilled spirits from
Scotland? Guess it could be all things Scottish, though it's most likely the
latter. I like Scotch, Scotch Tape, Scottish Eggs, and Scotsmen ... especially
Sean Connery
! It's that brogue. Mmmmm.... and kilts! And bagpipes!
Yes. It's in my blood!
My family tartan... Dunbar
.. and the Maxwell tartan...
In regards to the distilled Scotch (which in any case many Scotsmen contain Scotch) here are a number of legal requirements in Britain that must be met in order for Scotch whisky to be called 'Scotch.' It must be made in Scotland, for starters. And don't ever spell it 'whiskey.' Here in America, we salute those tradition-bound Scottish distillers by recognizing National Scotch Day! Are you on the rocks or neat?
And one of my favorite actors, Tom Selleck, Scotch is "his drink" on Blue
Bloods.

How NICE of you to put water out for the birds.
It is a vicarious thrill to see pics of your luncheon adventures with friends.
I was sorry to read that Peggy Fleming and her husband left the wine business. Our loss.
Some day I shall have to look up the McKenna tartan
The birds and deer empty out those tubs of water pretty quickly, L. Always fun to see them happy. McKenna. Cool. Irish! xo
