Good 52º clear sunny morning.
Every day I look at this mountain and I've just always referred to it "my
mountain", but called PJ's Dave yesterday and asked him the name of it. He said
it was Fielder Mountain. I looked it up. It's 3765' and in Jackson Co with drain
basins the Rogue River and Pacific Ocean. It's highest neighbor is to the
northwest and is in Josephine Co, Old Baldy at 4002'.
Yesterday by 2:00 it was 88º and only 9% humidity but I closed the house up
early and had only one ceiling fan on and it was so cool inside I had to put on
a sweatshirt! Then by 3 it was 92º and I turned on the AC!
Today is Throw Back Thursday... today is also my nephew Dr. Joe's birthday.
OMG, Joe, you're closing in on 60! LOL. HAPPY BIRTHDAY!!

Joe Jr. is an Emergency Specialist. With a tall dad, Joe was 6'6", tall
mom, Betty is 5'11", and two 6' sisters ... Nancy and MaryAnn, Joe Jr was bound
to be tall. He topped at 6'7". How they wanted him to play basketball at UCLA,
but he had his sights set on being a doctor!

Bill's 61st wedding anniversary. Don't know much about my bro-in-law anymore.
He's somewhere in Az, I think. Don't care. He treated my sis horrible for so
long!

My order from Harmony House arrived.
I got diced carrots, celery, mushroom slices, zucchini, a limited time
offer for chopped asparagus, a hearty vegetable blend with long grain white
rice, lentils, elbow macaroni, carrot dices, celery dices, chopped onion.
This will make a fine soup by itself or with added ingredients.
I received two free samples: bacon and diced sweet potatoes. All of this
has a 20 year shelf life.
Yesterday I got a head start on fresh spinach day. First I cooked some
mini-spaghetti and re-hydrated some chopped asparagus.
Then mixed up some veggies and broccoli slaw.
Added olive oil to a pan, added in sliced mushrooms and sauteéd them a bit
and added in the veggies, including the asparagus. A little Lawry's Garlic Salt
and a little water and steamed/sauteéd a while.
I had some soft light blue cheese....
So I added in the cooked drained mini spaghetti and the cheese...
Let it heat well and the cheese melt, stirring good. Then I added in two
cans of drained salmon, stirring well.
Then stirred in the fresh spinach. Taaaa daaaa....
REALLY GOOD!!! (Guess what's for breakfast too!)

Fresh Spinach Day
Fresh Spinach Day is our opportunity to put healthier food into our
diets.
Popeye the Sailor is right. Spinach is one of the healthiest foods you can
eat. It tastes good, and there are many recipes. Many people turn up their nose
to it, without even trying it.
The reason for eating fresh spinach, is the nutritional value is highest,
when it is fresh and uncooked.
Celebrate this day by introducing some fresh spinach to your meals today.
You could start by mixing in some spinach into your garden salad. Your family
may not even notice, but by doing so, you are making them healthier!
Gardeners know that spinach is easy to grow. And, it's hardy. You can plant
it as soon as the ground can be worked in the spring. Why, that's today in many

There is another day that we celebrate this healthy vegetable. It's National
Spinach Day, celebrated on March 26th. We think it is great that there are
two days to celebrate this wonderful vegetable, and to encourage people to eat
healthier.

You have such a yummy blog. Interesting list on what not to eat. I don't worry about GMO nearly so much as I do starvation- which much more of the world would do if it weren't for speeding up the evolutionary curve in horticulture- which is basically all GMO stands for. For those who are concerned with GMO- none of the seeds sold to consumers use GMO- it is too expensive for all but large commercial agriculture.
Oh good! At least there's something in my frig that's healthy V8 Juice! :) I was sad to see so many of the things I use and eat on that no no list! Microwave popcorn? Oh no!! Tilapia? Our fave kind of fish! Milk! Yikes
Love Michael Flatley! I have seen his production of Lord of the Dance and have the video. Love Irish dance!
