Good 34º clear morning. UGH.......... so hate getting used to
time changes and getting up in the DARK!!!!
Yesterday I met Brian and Sami at Tap Rock for breakfast.
Jen was doing a Lego Party and she had cupcakes to make and
party set up to do. Tucker stayed home and helped make the cupcakes. After we
ate Brian and Sami played on the waterfall....
Spring has sprung!
I has the
Zesty Farmstand Skillet and a mimosa!
"Chock full of vegetables – fresh zucchini, cremini
mushrooms, organic spinach leaves, roasted red potatoes,
Tillamook® Swiss cheese, peppers and onions. Topped
with two farm-fresh “AA” scrambled eggs*, chipotle salsa
and green onion. Served with a freshly-baked blueberry
muffin."

The muffin (OMG they are soooooooo good!) I brought home for breakfast
today! This was really good, but too many potatoes! I'll just keep trying new
things. Never the same thing twice, that is the fun of it!

Dude did his run...
I took the trash to the road, stopped in PJ and Dave's and fed the fish.
They were soooooooooo happy!!!!
Dinner was a concoction ... I cooked a couple yams in the
casserole Crock*Pot in a little water, inside side up, til tender (couple hours
on high).
Then I cooked some gnocchi in very garlic salty water,
drained.
The mushrooms and gnocchi went into a frying pan with some olive oil and
sauteéd for a bit, then added in Alfredo Sauce.. and topped that with some
shredded Mozzarella and some cut up Provolone!
I let it sit on warm until I peeled and cut up the yams... then stirred
them in
The last thing was to dish it up and top with pre-cooked crumbled bacon
(*Costco)..
That and a glass of vino.... HEAVEN!!!!
All I know. Nuff said. Happy Monday. Ciao.

Your concoctions amaze me. Who would think to combine all those things. I love Alfredo sauce. Much better than tomato sauce. I half expected you to add spinach too. :)
Nice Sunday breakfast with Brian and Sami. I find it cute that Tucker would stay behind to help Mom bake. He must love that to miss breakfast with you all.
I'll bet Art H.'s grandfather was in tht pic with your family. He was PV's general. Yea, I know, I tell you that every time. :)
XOXO Trisha
Ha ha ha, yes Trish, I would have put spinach in that concoction, but didn't have any! Tucker is quite the kitchen master. He loves it, like his mom! Show Art the picture! xo
Yams & Gnocchi w/ Alfredo Sauce
Your post with the above prompted me to respond. Yams and Gnocchi are both a favorite of mine, although I've never had them together. And with Alfredo Sauce sounds devine. I myself am not into "jar" sauces, and Monika is well knowledgeable about Italian sauces, so I will let her make her own (to hell with the calories). I will also probably add a "salty" type meat other than bacon (from Costco which I love), of which there are many. Thanks for the idea to put yams and gnocchi together.....ron
