Dinner Thursday was another "put it all together in one pot" meal.
I had mushrooms, canned peas, yellow/red/green bell peppers, Quinoa, carrot
chips (pre-sliced), Fajitas seasoning, Teriyaki Chicken Aidells Meatballs,
asparagus, celery.....
I cooked a cup of the Quinoa (in 2 cups water) in the rice cooker...
Then I mixed the carrot slices with olive oil and garlic salt and roasted
them 30 minutes at 350º...
Next was chopping all the veggies and put them in a fry pan with olive oil
and garlic salt... fried/steamed until not raw..
In the meantime I brought a pot of water to boil, added in garlic salt, and
dumped in the rinsed (get off the dirt!) mushrooms (2 packages) and let bubble
for 10 min, shut off the heat and let stand til they sink to the bottom of the
pot. Drained them. Added the cooked Quinoa to my casserole Crock*Pot, added in
the mushrooms, peas, roasted carrots, meatballs, and Fajitas seasoning
....
The sauteéd veggies went on top. Mixed it up and turned on Low until I was
ready to eat...
ALL YUMMY!!! Those teriyaki meatballs were FABULOUS!!!!
This could also be made with a rice blend (brown/wild ect.)
I felt very healthy after eating this!!!
I picked up a package of rice blend at Safeway yesterday I had not seen
before... Lundberg Wild Blend Rice (Gluten free, whole grain) It has long grain
brown rice, sweet brown rice, wild rice, whole grain Wehani rice, and whole
grain Japonica rice. Made and distributed by Lundberg Family Farms in Riverside

National Cereal Day
It’s
National Cereal Day! Cereal is the most popular breakfast food in America, but
that wasn’t always the case. Up until the 1860s, most people ate eggs, bacon,
and sausage every morning. Cereal emerged as a healthier alternative at the end
of the 19th century.
The
invention of one of the most famous brands of cereal was an accident. In 1877,
two brothers named John Harvey Kellogg and Will Keith Kellogg were experimenting
with food made with boiled wheat. They left a batch out overnight and returned
to find it stale. Instead of throwing it away, they rolled it out and discovered
that each wheat berry formed its own flake. They tried the same process with
corn, and created the first dry breakfast cereal, which we now know as Kellogg’s
Corn Flakes!
Many
people start their day with a bowl of cereal. Wholegrain cereals are an
excellent source of fiber, iron, and B vitamins. Celebrate National Cereal Day
with a bowlful of your favorite

I especially liked the second tree moon photo. It looks like the moon is sitting on a branch. pretty and eerie at the same time.
Again I cracked up at the video of the guy with the brief case full of money! LOL Good trick for the cops to use! :)
I always have to run thru my head "Spring up, Fall Back" when figuring which way to turn the clock. We lose an hour this time.

Thanks for the reminder of re-setting the clock - dang, it'll still be dark when we start our morning walk :/ I wish they'd leave the time alone. What's the point anymore? Just reset my alarm clock, will do the rest later in the day - if I don't forget.
