Good 50º slightly foggy morning.
Got some drizzly rain yesterday. Not much, but OK.
I went into Grants Pass to give Leah the Cusinart mini, the
Gelato maker, and the professional mandolin. She was very excited about the
"gifts".... I am happy to have them out of my cupboards and she is happy to have some new toys!
Then a stop at the Eye
Care Group
to pick up my new glasses. This is a replacement pair for the ones Dude chewed on! They are my "computer glasses" ... seeing at an arm's length... also good for cleaning up the doggie do in the yard! LOL They are great and very
comfortable. The eyeglass specialist, (what are they called?) who fits them
after they are made, Jeff and I got to talking about our dogs. I told him the
story of Smoke. He showed me a picture of his little Rottweiler 1 year old and I
showed him Dude.
Yesterday's vet visit for Dude went so well. He has no gum or
teeth problems. I picked him up after 2:30. He was pretty lethargic the rest of
the evening. He's only supposed to eat soft foods for a few days. He had some
chicken stock and a few spoonfuls of his canned dog food, lamb and rice.

Monday I mentioned I had found Winston Elliott's name on the RELAC
newsletter as having passed away. Today would have been Win's birthday. RIP Win.

answer machine. Will try again.

So the concoction I made on Tuesday night was this...
Egg noodles, chicken with buffalo wing sauce (Costco), mushrooms,
asparagus, celery, red/yellow/green bell peppers...
Chopped all the veggies and put in big pan with olive oil and a little
white wine... sauté and steam to 'un-raw'....
Using peeled garlic (I know, lazy!) and my GarlicTwist I minced 4 cloves
and added them to the pan with the vegetables...

I cooked the noodles with lots of garlic salt...
Remember to put a wooden spoon across the top of the pot you are boiling
the noodles in so it won't boil over.
Next I stirred in a can of cream of mushroom soup, the chicken, the cooked
drained noodles, and some mozzarella cheese...
Heated well and dished up............ spicy enough from the buffalo chicken
and DELISH!!!!!!

National Baked Scallops
Day
(Easy recipe... serve with a side of
pasta, rice, or couscous and vegetables)
1 1/2 pounds fresh scallops (4-5 per
person)
3/4 stick butter, melted
1 cup crushed Ritz crackers
1 t minced garlic, more to taste
3 T chopped fresh parsley
1/4 cup grated Parmesean cheese
1/2 t Paprika
black pepper, a few grinds to taste
dash of cayenne pepper, if desired

Lemon Wedges
Preheat oven to 375 FWash the scallops and pat dry
Mix together ritz cracker crumbs, minced garlic, parsley, paprika, black pepper, cayenne pepper (if using) to make the crumb mixture
To prepare the scallops, first roll them in melted butter and then roll in crumb mixture
Place scallops in buttered baking dish
Spoon any remaining crumb mixture on top of scallops
Top with sprinkled, grated Parmesan cheese
Serve with lemon wedges
Bake at 375 F for 12-15 minutes until scallops are firm and crumbs are golden on top.

What a beautiful family Mitt has! Where did the blonde son come from? According to their wedding photo mom was a brunette then. Handsome guys!! Our country would have been 100% better off if Mitt had won! :(
I have computer glasses also. They are way better for this than reading glasses. Love mine.
