Good 48º drizzling morning. Yesterday the rain started about
4:45 and came down good most of the night. We got a total of 3/4". Good!! The
Weather Bug says Eugene is under alert. Looks like lots of powerful rain laden
clouds over their heads.

Do you have a party or family gathering coming up? Here is a yummy layered black bean dip:
1 8oz pkg cream cheese
1/4 cup plain Greek yogurt
1¼ cups canned black beans, rinsed and drained
1 10oz can Rotel diced tomatoes and green chilies well
drained
1 cup finely shredded 4 cheese blend
1 green onion, both white and green sliced
In medium mixing bowl blend the softened cream cheese with the
yogurt until creamy. Spread this mixture onto the bottom of a shallow dish or
pie plate. Layer the black beans over the cream cheese, then layer the diced
tomatoes. Top with cheese and add green onions. Serve with tortilla
chips.
For more flavor stir in some taco seasoning to the cream
cheese mixture. Double recipe, and put in 9x13 pan.

Chicken Cacciatore Day
And...
it's also White Cane Safety Day celebrates and recognizes the
achievements of the blind and visually impaired, and their independence. That
independence is represented by the white cane that they use to travel from place
to place.
The
white cane is an invaluable tool for the blind. It affords blind people a
freedom of movement they otherwise may not have. The white cane is a well
recognized symbol of independence.
If
you know someone who is blind or visually impaired, celebrate this day with him
or her. We suggest you let them take you for a
walk.

May your rain do what your heat waves do- make its way to Southern California.
I told the storm to go south, but it didn't mind me! :o(
