Good 47º smokey smokey smokey morning. Another fire up in
Corvallis. A couple more east of Medford. The Happy Camp Fire south of us in
California is still going like mad. Yesterday at 4pm the sun was almost
obliterated!
I had to laugh at Bruiser. He's so nosey... first his napping
position I love with his paws curled up...
Then he was investigating the balloons Jeannie gave me from
the birthday party....
A video of a little girl and her basset hound playing had
Bruiser's attention.....

The Ronald Reagan JCRW BBQ at Hanley Farm was fun yesterday. I got my
picture taken with Jackson County Sheriff Mike Winters! That is two Sheriffs in
4 days... Josephine Co Gil Gilbertson on Wednesday and Mike on Saturday!

Easy Enchiladas
10 corn tortillas
2 cups cooked, shredded chicken (or used the Costco canned..or get a cooked rotisserie chicken at the store)
2 cups shredded Monterey Jack cheese or a blend of white and yellow cheeses
3 T. butter
3 T. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies
2 cups cooked, shredded chicken (or used the Costco canned..or get a cooked rotisserie chicken at the store)
2 cups shredded Monterey Jack cheese or a blend of white and yellow cheeses
3 T. butter
3 T. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies
Directions
Preheat oven to 350 degrees. Grease a 9x13 pan
Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
Pour over enchiladas and top with remaining cheese.
Bake 22 min and then under high broil for 3 min to brown the cheese.
*side note - the sauce doesn't freeze very well, so if you're making them ahead of time. Just make and freeze the Enchiladas. Make the sauce the day of.

National Grandparents Day
To all my family and friends who are Grandparents, I wish you a wonderful day!

When: the first Sunday after Labor
Day
It
is only right and fitting that one day of the year is set aside to honor our
grandparents. It is time to celebrate those special people who are always there
with a hug, a kiss, a cookie, something special, or take us somewhere.
National
Grandparent's Day originated in 1978. Then President Jimmy Carter declared it to
be the first Sunday after Labor Day.
If
you can, enjoy the day with them. That is the greatest gift they can receive
from you. If you can't see them, call them, or skype. When you call, make sure
you have the time for a long conversation. Remember, grandparents will always
ask about you first and listen intently to everything you have to say. They are
never rushed or in a hurry. They are there just for
you.

I am so sorry for the smoke. I have a little colored glass bottle my parents bought as a souvenir from a Happy Camp vacation.
Oh my! All the good guys there at the BBQ. I pray for them all and wish them the very best!!
