Good 44º clear sunny morning.
Yesterday after I finished up the Smileboxes for the blog I did some
laundry (exciting) and took Dude to the vet's for his shots and stopped at the
Post Office to pick up my held mail.
While I was "off" I missed several birthdays....

Yesterday
I cooked some dried garbanzo beans in the crockpot for about 4 hours on low... 2
cups beans and 4 cups water. 1 cup becomes 2.5 cups after re-hydrating. Today I
will make the following hummus..
Lemon
Artichoke Hummus
1
15 oz can garbanzo beans (I will use half of the beans I cooked..2
cups)
14
oz can artichoke hearts, drained,
chopped
1/3
cup lemon juice
1/4
cup olive oil
1/4
cup tahini
salt
to taste
chopped
fresh parsley for garnish
toasted
pine nuts for garnish
Place
all ingredients in food processor or high-power blender. Blend until mixture is
smooth and creamy. Spoon into serving bowl and serve with veggies, crackers, or
pita chips.
