Good 50º cloudy rain possibly morning. Now I'm doubting it.
Weather peeps yesterday predicted LOTS of rain today. The wind blew late
yesterday but nada. Now there is no radar over us... and it's
SUNNY!
I put off my weed spraying because of the TV weatherman
predictions and Jeannie put off her carpet cleaning. Those poopy
liars!
After I came home from Tap Rock and brunch with Nancy and
David I caught up on mail and some magazine reading. Then I decided to make the
meatballs I put on the blog on May 17th. BUT I changed the recipe! Natch! I had a can of turkey soup, Stove Top
stuffing, sour cream, egg noodles, ground lean turkey, salad shrimp (from the US
OF A!), spinach, cheese, 2 eggs, and onion.
So I mixed the turkey with the stuffing, eggs, shrimp, cheese,
chopped spinach with my hands... and formed into 1" balls. Baked at 400º 25
minutes (higher altitude here...so added 5 minutes). Didn't add the water as the
shrimp were enough moisture.
I mixed the soup, sour cream, and some grated Parmesan cheese and heated
... Dip a meatball in the sauce and OH MY!
Of course I ate a couple of these tasty little bites (would make a great
hors d'oeuvre). I didn't make all into meatballs, but cooked some separately and
will probably add a marinara or Alfredo sauce and have on pasta....
Then I heated a pan with salted water and added in some noodles. After they
were pretty done I added in some fresh green beans and shredded carrots...
I also added in some fresh whole mushrooms and let all cook til
tender.
I drained the veggie/noodle mixture. Plated some meatballs with the
veggie/noodles and drizzled on some of the turkey/sour cream/Parmesan
sauce.
OMGOOOOOOD!!!!! Whodda thought... turkey/shrimp/cheese/spinach meatballs.
Crunchy and yet tender! I have LEFTOVERS!!!!!

National Devil's Food Cake Day
If you want to make the BEST chocolate cake, use the German Chocolate Cake
mix.... and get a can of the coconut pecan frosting (traditionally the frosting
on a German chocolate cake) and mix the cake per directions but add the can of
frosting mix INTO the cake mix. Bake in Bundt pan. No frosting needed. AWESOME
cake. Sooooooooo moist.

The meatballs looked really good. Who would ever think to put shrimp in a meatball. Again, you are the creative one. The entire dinner looked amazing. I'm with Lydia, "we are on our way". LOL

Thanks BFF, maybe I "think up" recipes like this because I'm bored. Could be..... or I just like most foods and mix them up and give it a try. Anway, good. Low in fat, high in protein, and spinach of course. Baked not fried. xo
