Yesterday was brunch at Tap Rock. Rainy day....
Our local TV station, KOBI, has weekly deals. I got 'all you can eat
buffet' tickets for Tap Rock for half price, so met Brian, Jen, Tucker, and Sami
there. Tucker only likes the chocolate chip pancakes so just 4 of us had the
buffet...
Good thing he's an active kid... there are a week's worth of calories in
this!!

... and I had scrambled eggs (super creamy), fruit (pineapple &
cantelope), a cheese blintz, spicy fish, apple sausage, and a taste of the
potato salad.... OMGOOOOOOD!!!!!!

How about an Roasted Asparagus/Parmesan Sandwich?
Now this sounds really good, as I LOVE asparagus...
Top 4 slices of whole-grain artisan bread with grated parmesan
cheese, place on rimmed baking sheet. Arrange asparagus around bread, brush with
olive oil and a touch of balsamic vinegar. Broil 1-2 minutes until cheese is
melted and bread is slightly toasted. Remove bread. Continue to broil another
1-2 minutes until asparagus is crisp tender.
Now this is up to you.. I don't care for tarragon so I'd use
the Best Foods Balsamic Mayonnaise and green onion ... probably chopped fresh
parsley or cilantro... Combine 2 T mayo with 3/4 T. chopped fresh tarragon and
1/2 T. sliced green onion. Spread over the un-toasted sides of the bread slices.
Top with asparagus, sprinkle with coarse sea salt and pepper. Top with bread
slice, parmesan side up. Makes 2 sandwiches.
