Good 42º possibility of rain morning. Yesterday felt like 80º
when I was out mowing, but it was only 64º!! With that sun shining it sure feels
a lot warmer. Now we have rain in the radar ... but the forecast doesn't include
rain... ???

Colcannon. A St. Pat's
staple and tradition in my house! And a BIG FAVORITE of
mine!
Colcannon is traditionally made from mashed potatoes and kale (or cabbage), with milk (or cream), butter, salt and pepper added. It can contain other ingredients such as scallions, leeks, onions and chives. There are many regional variations of this dish.It is often eaten with boiled ham or Irish bacon.
An old Irish Halloween tradition is to serve colcannon with a ring and a thimble hidden in the fluffy green-flecked dish. Prizes of small coins such as threepenny or sixpenny bits were also concealed in it.
The Welsh dish cawl cennin, despite the somewhat similar sound of the expression, is etymologically unrelated to colcannon, and is a leek soup, literally "broth (of) leeks."
2 pounds
white cabbage, shredded
2 cups
water
4 pounds
potatoes, peeled and quartered
2 cups
milk
1 cup chopped
green onions
Sea salt and
coarse ground black pepper
1/4 cup
melted butter
In large
saucepan bring water & cabbage to boil. Reduce heat and let simmer 10
minutes. Drain, reserving cooking liquid.
Place cooking
liquid back into pan with potatoes, add enough water to cover. Bring to boil,
reduce heat, simmer 15 minutes. Drain and keep warm.
In a small saucepan bring milk and onions to boil, remove from
heat. In large bowl mash potatoes, add milk mixture, beat until blended. Add in
cabbage, salt and pepper. Stir well. Put into serving bowl and drizzle with
butter, bacon, and parsley. 12+ servings.
Prior to mowing the front grass yesterday I went into town.
Vets for flea/tic meds for the Bruise. Birthday cards mailed at Post Office.
Picked up some Gold Bond with Aloe lotion that I have discovered I LOVE. Makes
my skin soooooooooooo soft and those rough old heels on the bottom of my feet
!!!! Then to the market for a corned beef brisket, potatoes, cabbage, carrots,
onions, leeks, Dave's Killer Rockin' Rye Bread (www.daveskillerbread.com ), Jack
Daniel's horseradish mustard, and a Guinness beer. Also picked up fresh
Chinook salmon. So, dinner last night was salmon... topped with garlic powder,
basil, and hazelnut rub... cooked in Brummel and
Browns....
The the veggies were stir-fried in a bit of olive oil and
then lemon juice added, the lid put on so they'd steam....
Sooooooooooooooooooooooo good. Leftovers for
tonight!
The two pair of geese hung out all day. Lounging in the
pasture in the sun!
While Bruiser was in and out and doing his climbing all
over the place routine ... on top of my computer, one paw on the flashlight, and
something outside caught his eye!

THANK YOU Sue for the Birthday wishes. Since I've taken a FB break, I don't get very many messages any more.lol... I am indeed Irish (mixed with Scots and English) and love your Colcannon Recipe and all my stuff ready to cook for Monday. BTW... I look forward to seeing you in Laughlin next month.
