Dinner last night was fresh salmon, mandarin orange simmer
sauce, mini squash, and tomatoes.
Put the squash in a bowl and drizzle olive oil on them.
Then sprinkle on the Panko crumbs. Heat oil in a skillet and cook over medium heat with the lid on for 6-8 minutes, remove lid and sauté. Add oil to another skillet and sauté the salmon on both sides, add some simmer sauce and continue cooking until done.

Oh my! Love the looks and sound of your squash especially! Love the little round summer type but it's hard to find them in the markets.

Love the Salmon and Love the zucchini with "patty pan" or summer squash, they are just so hard to find around here. I had to show my produce man what they are and he still didn't know if he could get them... still waiting..!!
Think I'll fix up some Irish Potatoes for dinner here and watch some more thunderstorms tonight.

I just want to say that YOU are always so thoughtful on B'days for your friends...it warms my heart every time you pause to honor each of them and I can feel that precious spirit you have with each of your friends, even if I don't know them personally.
