Good 26º (Magg's water frozen!) dark morning. Supposed to be somewhat
cloudy today and rain Tuesday and Wednesday. Will probably look the same as
yesterday.... with the new green popping up...it looked like Ireland!
Yesterday being St. Paddy's.... I didn't have any Irish Whiskey, just
Scotch and that wouldn't do on an Irish Day.. so made some coffee and put in
Irish Cream. OMGOOD!!!
First thing I put the corned beef on to cook. I mixed 2 cans of Guinness
with 2/3 cup of brown sugar. Added the meat and let it cook 5 hours.
After a couple of hours it started smelling soooooooooo good!
While that was cooking I made some green cookies...
Using sugar cookie dough I rolled it into little balls, rolled them in the
green sugar, and put 3 or 4 together on the cookie sheet to resemble
shamrocks... THEN I discovered that easier than "rolling" them in the sugar, I
put the sugar in a container, added the cookie balls, put on the lid and shook
them! Taaa daaaa..... EASIER! Then, tired of the shamrock look I just cooked
them individually.
OMGOOD!!! I could have eaten them all! Oink.....
When I bought the Guinness I was wondering "what the heck is that boinking
noise in the can?" .....
A widget is a device placed in a container of beer to manage the
characteristics of the beer's head. The original widget was
patented in Ireland by Guinness. The "floating widget"
is found in cans of beer as a hollow plastic sphere, 3
cm in diameter (similar in appearance to a small table tennis ball) with a
small hole in one side.
My granddaughter Sami wanted to "facetime" (like skype) with me on the iPad. She is so
funny and enjoys getting close and making faces! She said, "Bobo, do you have any green on?" ... Of course! My pajama bottoms:
Hey, I don't take any chances on getting pinched! Although in the scheme of things, highly unlikely in my situation!
Our gaggle of geese is growing.... from the original 3 to what looks like 10
or 11.
Ok, so after the corned beef had cooked for 5 hours on high I added a
couple cups of water, tasted the broth and it was really delicious! Added in
some chopped leeks. After another 2 hours on low I added in baby carrots and
some beautiful white mushrooms cut in half. Cooked another hour and a half or so on low.
Cooked the potatoes, mashed them with butter, added in sauteéd cabbage.
OMGOOOOOOOOD!!!!! Today is sandwich day!
Sigh...until next St. Paddy's Day, remember... A good memory is one that
can remember the day's blessings and forget the day's troubles.

Yes, your jammies are a hoot! Do you wear them thru the year or save them for St. Patty's? :)
Your din din looked awesome. Your cut of meat looked way better than the one I cooked! I always try to find two of the largest they have but when it's loaded with fat, not good!
Melinda Lee on the radio says the point cut is way more flavorful and of course is cheaper. Well after this last one I don't care. I will just ADD the flavor instead of having a ton of fat!
